This is a new favorite in this house. The picky boy gobbled up three before I had a chance to have my second one. He usually tries to stay away from gluten-free dishes whenever he can, but he couldn't tell they were gluten-free at all. Hooray! We all loved them and even if gluten was allowed in this house, I would make them the same. Because they are just plain delicious! I hope you enjoy the recipe as much as we do!

Gluten-Free Chicken Alfredo Rolls
1 TBSP Dry Active Yeast 1 teaspoon sugar
3/4 cup warm water
1/2 tsp baking powder
1 teaspoon guar gum
1/2 cup super fine brown rice flour
1/2 cup superfine sweet rice flour
1/2 cup tapioca starch
3/4 teaspoon fine sea salt
1 tablespoon olive oil
1 large egg, lightly beaten
1/2 teaspoon apple cider vinegar
2 Chicken Breasts
2 TBSP Olive Oil
2 large whole boneless chicken breasts cut in half
2 tsp Italian seasoning
salt and pepper to taste
2 cups mozzarella
For the Alfredo Sauce:
1 cube butter
1 TBSP corn starch
1 tsp salt
1 tsp pepper
2 cups heavy whipping cream
2 cups shredded parmesan
Combine the yeast, sugar and warm water in a bowl about twice the size of the mixture and whisk to dissolve the sugar. Let sit for 10 minutes or until it is foamy and doubled in size. If it doesn't foam, your yeast is old and you need to start over.
In a small bowl stir the guar gum with the olive oil until the gum is dissolved.
Sift together the flours, tapioca, and salt.
Place in the bowl of a mixer fitted with a whisk or paddle attachment.
Add the yeast mixture, guar gum mixture, eggs and vinegar and mix on low to combine. Scrap down the sides of the bowl once. Turn the mixer to high and mix for 3 minutes.
Now you need a pan with holes. I used my pizza pan, but there are pans out there that have holes and are loaf shaped. Spray your bread pan with gluten-free, non-stick cooking spray or brush with more olive oil.
Spoon the batter into Rolls. Cover the rolls with a clean kitchen towel and set in a warm, draft-free place to rise. . Let rise for 30 minutes or until the loaves have doubled in size.
While rolls are rising..
Wash your chicken breasts and blot dry. Add Salt, Pepper, and italian seasoning to both sides.
Heat a skillet over medium high heat. Add oil, and then your seasoned chicken.
You just want to lightly brown the chicken on both sides to sear it, not cook it through.
Place your chicken in an oven safe dish and add to your preheated oven. Cook for 20 minutes.
Now it is time to work on the sauce: Start by heating your garlic, butter, salt and pepper in a large saucepan.
Next add your flour and whisk until smooth. Cook until bubbly and then add your whipping cream.
Stir constantly until it comes to a boil.
Shred your Parmesan. The Microplane® Elite Paddle Grater works great for this!
Then add your Parmesan and stir continually until thick and creamy.
Now cut up your chicken into bite sized pieces.
Stir in the chicken and the sauce together.
Now you need to use a spoon or clean hands to make a hole in the center of each roll.
Spoon the chicken alfredo mixture into the center of the rolls. Shred your mozzarella (again the Microplane Grater works great for this).
Sprinkle the cheese on the top of each roll.
Place a pan filled 1 inch high with hot water in the bottom of your oven. Now bake your rolls for 25 minutes at 400 degrees.
Serve!

I liked the Microplane Elite Series Grater on fb. This seems like a great tool, not only for measuring but a nice catch for whatever you are grating.
