Inversion progression

Yep guys, that is me!

I am super excited because my first ever Yoga challenge starts in one week on instagram! I am excited for multiple reasons, but one reason in particular is causing me to burst with happiness, and I am ready to share it with you!

I just signed my third book contract and next year at this time my new book "#instafood - The beginner's guide to eating healthy and staying fit." Will hit the shelves of stores! I am so excited to bring three of my passions to this project.

1. Healthy whole food recipes - there will be 125 wholesome recipes
2. Yoga - there will be 125 poses
3. Photography - Full color photography for both the recipes and the yoga!

I am working with numerous athletic wear companies and we will be doing different challenges each month to help motivate people to move. The first challenge is called #30DaysOfYoga. I have previously posted about this, so to qualify for $200 of free yoga gear from our sponsors, read how to play along here: http://whatsfordinner-momwhatsfordinner.blogspot.com/2014/04/30daysofyoga-challenge.html
I hope you get to join along.

Yesterday we did a big photo shoot. In between shooting the models, I got a couple shots of myself. I had never done a headstand at the beach before and it was so amazing.

What a completely different experience! I encourage all of you to try it.

Raw Pad Thai Salad

I recently was blessed to review Raw Food French Style by Delphine de Montalier
This fabulous book contains 115 recipes for the curious omnivore from a new generation of French chefs. This stylish and accessible take on the next big trend in food includes soups, salads, juices, seafood, raw and seared meat, and deserts. This book made me want to rush to the farmer's market so I could get busy making the scrumptious healthy dishes.

Wanting to tell you all about the book I quickly picked a recipe that I knew we would love. Raw Pad Thai. "Traditionally, Pad Thai calls to mind the fried rice noodle dishes commonly served as street food in Thailand. A typical Pad Thai also includes some simple raw ingredients - such as radish, herbs, and bean sprouts, which are available on the day. This flexibility extends to the Pad Thai here. Depending on season and taste you can vary the vegetables at will." -Delphine De Montalier  The salad was so easy to make and is full of thai flavor. We all loved it. Enjoy!

Raw Pad Thai Salad
adapted from Raw Food French Style

8 ounces baby spinach
1 small sweet onion
11 ounces asparagus
1/2 green pepper
2 green onions
1/2 bunch cilantro

Dressing:
2 Tbsp olive oil
2 Tbsp apple cider vinegar
1 garlic clove
juice and zest of 1 lime
1 tsp gluten-free soy sauce -or- braggs amino acids
2 pinches chili pepper
sea salt and fresh ground pepper to taste

Crushed nuts for garnish (cashews or peanuts)

Wash and prepare all vegetables. Everything needs to be thinly sliced, grated, or cut julienne style.
Toss all ingredients to combine them, set aside while you make the dressing.

For the dressing, mix together in a small bowl the olive oil and the vinegar. Add the garlic, stirring to blend smoothly. Stir in the lime juice, zest, soy sauce, and chili pepper. Add a little salt and pepper to taste. Pour the dressing over the salad ingredients and toss well to coat the ingredients evenly. Chop the cashew nuts coarsely and either scatter the on top of the salad or offer them separately.

Banana Split Bites

I recently was blessed to review the amazing cookbook Eat More Dessert by Jenny Keller who is best known for the amazing dessert tables she makes for Hollywood celebrities.

EAT MORE DESSERT is overflowing with simple-to-make and fun-to-eat treats for any celebration, big or small.  With themes ranging from baby showers, weddings, holidays and birthday parties, you’ll find ideas and recipes to celebrate any and every occasion.  In addition to over 100 dessert recipes, the book is filled with tips and tricks for creating the perfect dessert table, from choosing a fantastic theme to styling your sweets. The themes were my favorite. I want my kids to have this book for when they have kids. Wish I would have had it around. Get yours at AmazonBarnes & NobleBooks-a-MillionIndie Bound, and wherever books are sold.
One of the cute desserts in this book is the simple banana split bites. I had a movie marathon with the ladies and I made a knock-off of these. They were so good and devoured quickly, so make sure you make a lot of them! They really do taste like a banana split, but they are much more healthy! Naturally gluten-free, enjoy!
Banana Split Bites
adapted from Eat More Dessert
Makes 12 mini bites

4 Ripe bananas
12 ounces good chocolate
whipping cream
sprinkles
crushed nuts (I used cashews)
candy for topping or fresh cherries

Melt the chocolate in a microwave-safe bowl for 3 minutes at 50% power. Stir until smooth.

Peel and cut off the ends of the bananas. Discard them, I did this by popping them into my mouth. Cut each banana into three pieces. Dip the ends into melted chocolate and sprinkle with rainbow sprinkles or nuts. Place upright on waxed paper to dry.

Top the bananas with whipping cream and a candy or cherry. (Your choice).
