Set a goal. Commit to a plan. Tell the world. 
Today I just successfully finished a 3 day cleanse! I am feeling on top of the world and ready to conquer my next program. So here are my before pictures. I purposely chose shorts that are too snug hoping I will fit them after.

Healthier Mac and Cheese (vegan options)


So we found this great Quinoa pasta at Costco that is non-gmo and organic and the ingredients are: Quinoa. 
Pretty amazing! So we gave it a shot.. and the verdict was... YUM! HIGHLY recommend. 

So instead of making it horribly unhealthy and smothered in cheese, cream and butter. I decided to make a healthier sauce, made from nutritional yeast and almond milk. 
Guys it was divine. 
I do add parmesan cheese to the top, because I love it and it is all about balance. 
Roasted chicken on top is good too. Here is the recipe for the macaroni. 
Enjoy!

Healthier Mac and Cheese

1 head roasted garlic
12 ounces quinoa elbow macaroni (they are gluten free and yummy)
4 Tbsp olive oil
4 cloves garlic, minced
4 Tbsp potato starch (you can also use potatoes instead)
2 cups unsweetened plain almond milk, plus more as needed
Sea salt and pepper to taste
5 Tbsp nutritional yeast
1/2 cup Parmesan cheese (if Vegan use Vegan parm substitute)

Bring roughly 10 cups water to a boil in a large pot and salt with pink himalayan sea salt  generously. Once boiling, add pasta and stir to prevent noodles from sticking. Cook according to package instructions . Once fully cooked, drain and set aside.

Sauce time! Heat a large, oven-safe skillet over medium heat. Once hot, add oil and minced fresh garlic. Stir and cook for 1-2 minutes, or until light golden brown. Immediately add potato starch and whisk - cook for 1 minute.

Slowly add almond milk while whisking, then cook for 2 minutes over medium heat, whisking constantly.
Add roasted garlic. To extract garlic, simply push up from the base and the softened cloves should come right out.

Add cooked, drained pasta to the sauce and toss to coat. Then top with parmesan cheese.

Optional: Heat oven to high broil and position a rack at the top of the oven. Broil pasta on high for 1-2 minutes (optional), or until golden brown (see photo). Watch closely as it can burn quickly.
Serve immediately. I love topping mine with an extra pinch of vegan parmesan cheese - I can never get enough of that stuff.
Leftovers keep covered in the refrigerator for up to 3 days, though best when fresh. Reheat in the microwave or on the stovetop - add extra almond milk if it's dry.
Optional: Top with roasted chicken.

Snickerdoodle Superfood Cake Clean and healthy




My daily shakeology is SO MUCH more than a SHAKE. 
.
When I first heard about BeachBody and I heard there was a " shake" I was like NO WAY!!!! if I learned anything from my cancer journey it's that a liquid lifestyle works against you in the long run. I am not a quick fix or gimmick girl.
.
BUT When I researched shakeology I found it was NOT a meal replacement shake, it was NOT a chemical full weight loss quick fix ... It was based on the old school mentality of good nutrition and working out.... It was a HEALTHY , GLUTEN-FREE, CLEAN, SUPERFOODS SHAKE and it was ACTUALLY CLEAN. ( something that's hard to come by) 
.
Wanna know what else I learned? I can make SCRUMPTIOUS cakes, cookies, pies, pancakes, waffles.. you name it.. out of it!!!!!

Guys it's not a shake....it's a SUPER HERO!!!!

This scrumptious Snickerdoodle cake takes less than 5 minutes to make. It is full of 5 salads, all your adaptagens, polynutrients, greens, and superfoods... all in one yummy dessert that makes me feel like I am cheating it is so good. 21 day fix approved (hello red container), ‪#‎clean‬ , ‪#‎glutenfree‬, Refined sugar free, and no guilt!

Snickerdoodle Superfood Cake

1 scoop vanilla shakeology
1 TBSP almond butter
1 egg
1/4 tsp baking powder
1 tsp cinnamon
1 TBSP maple syrup
2 tsp almond milk



Mix together and pour in a prepped custard cup ( i just spread in coconut oil with my fingers).

If you want a fully cooked cake like this it is 90 seconds on high in the microwave.

If you want a lava type cake it is 60 seconds.

Live the life of your dreams, stop waiting, start doing.

When I FIRST became a coach ...I did it to become healthy. PERIOD. I knew I needed accountability to do so. I believe everyone does unless you have the will power of Jesus.. and I don't! 

Then When I signed up, I was told that VISUALIZATION and Picturing what you want WHILE putting the work behind it was KEY. I pictured myself with long hair, a slim build, happy and healthy, traveling... basically I pictured this picture.... AND GUESS WHAT? It's real! It is no longer a dream or a goal, it has happened and is continuing to happen. 

I am not here to shame you in to thinking you aren't enough where you are. Because you ARE enough. I am here to tell you that IF YOU ARE NOT where you want to be... you can get there. YOU have the power! I am a strong believer people but at some point you have to STOP looking UP and START looking INSIDE yourself. God gave you the strength beautiful. You have it. You can do it! 
.
WHATEVER you want, it's possible. WHATEVER you can dream, you can DO. We get JADED from life and we forget that mentality we have as children that let's us SET FREE our imagination, before we are jaded from FAILURE. GUESS WHAT? Failure is STUPID. 

The only way you fail, is if you stand still and don't do anything. YOU hold the power.

Guys this makes me smile so big! I got a few of my teammates together to post a picture of who they are, or what they represent, what definition resonates with them. Look how blessed we are! All of these beautiful people come from many different backgrounds, different careers, different parts of the country but we share one BIG thing in common, we want more out of life and we want to help others feel the same.
