Green Chile Scalloped Potatoes

 
Today I am bringing you another recipe made from Terra Verde Farm products.Using Hatch Green Chile Sauce I was able to make some very healthy yummy spicy scalloped potatoes. It was very easy, to do. They make a great side dish  to any meal. If you love potatoes and like a little kick, these are for you! 

Green Chile Scalloped Potatoes
4 large potatoes, peeled and sliced.
1 large sweet onion, chopped
½ Cup Terra Verde Farms Hatch Green Chile Sauce
Sea salt to taste

Preheat oven to 375 degrees.
In a baking dish, spray with non-stick cooking spray. Add half the sliced potatoes, onions and half of the green chile sauce and salt.
Repeat to make another layer, don't forget to add salt.
Bake for 35 minutes at 375 degrees.

Pumpkin Spice Martini


T.G.I.F! Time for an adult drink. Let's get in the holiday spirit! Nothing says Halloween and Thanksgiving more than Pumpkin. So if you are getting sick of me cooking with Pumpkin... you are going to have to humor me a bit longer. This is not low calorie, but it is sure going to make you feel cozy and in the holiday spirit.

Pumpkin Spice Martini
1 part Captain Morgan
1 part Vodka
1 part whipped cream vodka
Ice
2 tsp. sugar
1 tsp. cinnamon
nutmeg

Mix together the sugar and cinnamon. Dip the the rim of the martini glass in a bit of vodka, then place the glass rim into the cinnamon and sugar mixture until the rim is coated.

In a cocktail shaker filled with ice, combine the liquor and pumpkin spice concentrate 
Shake vigorously for 15 to 20 seconds. Strain into the rimmed glass,
sprinkle with cinnamon or nutmeg and garnish with a cinnamon stick.

Gluten-Free Pumpkin Spice Scones

I love a good scone. I also love all things pumpkin, but you know that by now. Today I am sharing these scones again. The picture isn't that great because it was from two years ago. It is always good to know my photography is improving. 
Serve these yummy scones with some chai tea during harvest time!

Gluten-Free Pumpkin Spice Scones 
2 cups gluten free all-purpose flour ( I used Maninis this time, I am addicted)
1 tsp xanthan gum if your gf flour doesn't already contain it
8 Tablespoons granulated sugar
1 Tablespoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground ginger
6 Tablespoons cold butter
½ cup pumpkin puree
3 Tablespoons half-and-half
1 large egg

For the Glaze:
1 cup powdered sugar

Preheat the oven to 425 degrees F. Line a baking stone with parchment paper; set aside.

Sift together flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves and ginger in a large bowl of your kitchenaid mixer. 
Using the blade attachment on your kitchenaid on medium add the butter into the dry ingredients until mixture has the consistency of sand.

In a separate bowl, whisk together the pumpkin, half-and-half and egg.

Using the paddle attachment again, pour wet ingredients into dry ingredients, 
and form the dough into a ball. Working with gluten free dough is a little different due to its sticky texture. So I always put down some plastic wrap, and then I lightly dust it with gf flour. 
Put the ball of dough onto the plastic wrap and then flip over the dough so that the top is lightly floured as well. Cover wiht another piece of plastic wrap.  Pat out dough and form it into a 1-inch thick rectangle about 3 times as long as wide. I used a roller.

Use a pizza cutter to slice the dough twice through the width, making three equal portions. Cut each of the portions in an X pattern .
 Place on prepared baking sheet. Bake for 12-14 minutes, or until light brown.
 Place on wire rack to cool.

To make the pumpkin spiced glaze, combine powdered sugar and pumpkin spice concentrate. Drizzle over each scone and allow the icing to dry before serving (about an hour).

Gluten-Free Pumpkin Spice Rice Krispy Treats

 
Today I am bringing you another sweet treat for this Autumn/Fall season. Great to serve at Halloween and Thanksgiving parties. 

Gluten-Free Pumpkin Spice Rice Krispy Treats


1/4 cup unsalted butter
10 oz bag marshmallows 

1/4 cup pumpkin puree
1 tsp pumpkin pie spice

5 cups gluten-free rice krispies cereal 
1 cup white chocolate, melted 
*optional food coloring


In large pot, melt butter over medium heat. 
Add in marshmallows and stir constantly until melted, once almost melted, add in your pumpkin puree and pumpkin pie spice. 
Stir constantly until fully melted.
 Fold in cereal.
Pour mixture into buttered foil pan. Or you can just pour it onto parchment. I put it on parchment because It is easier to cut.  Press treats into a rectangular form. 

I used my knife to cut into squares. 

Optional: Drizzle melted white chocolate colored with orange and white over top of treats  Allow to set about 1 hour.
