Creamy Dijon Dill Salmon


Phew! This week has been CRAZY BUSY! It has been one thing after another. I find from the moment I wake up, until the time I go to bed, I am running non-stop. How do you all fit everything into your day? I could use some tips! 
Today was just as hectic as the ones before and by the time my husband text me and said he was on his way home, I had just got back from walking home from the grocery store. Thank goodness tonight was fish night. Fish is always so fast and easy to cook, so it is my go to on a busy day. 
This recipe came together very quickly. It is one of my easiest recipes, and one of the tastiest!

Gluten-Free Creamy Dijon Dill Salmon
Serving Size: 2-3

4 Salmon Filets
2 small garlic cloves, minced (about 1 Tbsp.)
1/2 small onion, minced (about 2 Tbsp.)
1 Tbsp. fresh dill, minced
2/3 cup Greek yogurt
1Tbsp. Dijon Mustard
Fresh ground pepper and salt, to taste
Lemon, sliced

Preheat oven 400F. 
Lightly grease baking dish and place salmon skin side down. 

In small bowl, stir together yogurt, garlic, onion, dill, and fresh ground pepper. 
Spread mixture on top of salmon.

Cover and bake 10 minutes. Remove cover and bake for another 10 minutes. Serve with lemon slices.

    I wish I knew how to fit everything in one day..I am trying to catch up with things everyday. I need at least 2 more hours in a day.. and such salmon for dinner :D
