I love this time of year. Our local farmers market in little Italy is so much fun to shop! The tomatoes are sweeter, sweet onions are available everywhere, my herbs in abundance on my window. Spring is here. Veggies are a staple.
I wanted to make a lite salad that let the sweet natural flavors in Spring Veggies shine. This salad hit the spot. So healthy and wholesome! Enjoy!
Cucumber, Tomato, and Onion Salad
adapted from Paula Dean
1 Cucumber peeled and thinly sliced
1/4 sweet onion, very thinly sliced
2 tablespoons chopped fresh parsley
2 tablespoons vinegar
1 tablespoon olive oil
Salt and freshly ground black pepper
In a large serving bowl, toss together the cucumbers, cherry tomatoes, onion, parsley, vinegar, olive oil, salt, and pepper, to taste. Let the salad stand for 10 minutes before serving.
I am from Ukraine and this salad makes to the top of the list during the summer in Russian and Ukraine. We love it
ReplyDeleteI love a light salad like this... I would eat it with a rice and curry meal for sure. :)
