My daughter has quite the sweet tooth. She didn't get it from me. I like chocolate, but she likes sweet everything. One of her favorites is sweet salsa. This is a quick way for me to get her fruits and veggies in, while also getting some of that sweet urge taken care of.
Charred Pineapple and Mango Salsa
1 Pineapple
1 ripe mango
2 limes (both zest and juice)
1 bell pepper
1 green pepper
2 scallions
1 garlic clove
1/4 cup cilantro
2 teaspoons extra virgin olive oil
coarse salt
Chili powder (only if you like spice, I left it out because my daughter hates spice)
Peel and slice the pineapple.
Heat the grill on high. You can also heat a ridged cast iron grill pan on the stovetop over high heat until very hot. Place the pineapple slices on the grill and cook until they appear charred.
Turn over and char on the other side. Peel the mango and slice the flesh from the pit. Cuz the slices into a medium dice and drop into a medium bowl. Toss with lime zest. and lime juice.
When the pineapple has cooled to room temperature, cut it into medium diced pieces and add to the bowl, along with red onion, bell peppers, scallions, garlic and cilantro and stir well. Add the olive oil and season with salt and chili powder. Refridgerate until you serve.
