Time for all things Strawberries! Perfect time because my Summer Shape Up Online bootcamp starts May 28th (day after memorial day). Want in? Be sure to send me a message because the spots are filling up fast. Come dial it in with me for 30 days and watch your life change from the inside out! The reason why its so great to do a program now, is because produce is in it's PRIME, making it easier than ever to eat amazing delicious food all while staying on track. Strawberries are one of the things that make my life easier, cuz duh... they are amazing! I previously made some Lemon Poppyseed muffins that my family has been going nuts over. Of course they are gluten free and grain free too. But the daughter wanted strawberry lemonade muffins next, so I got to work. These are everything you want in a muffin, without the guilt. If you are on my nutrition program one counts as:
1/2 Purple
1/2 Orange
1 Spoon
Strawberry Lemonade Muffins (gluten free and healthy)
2 eggs
1/2 cup pure maple syrup
1/3 cup fresh lemon juice
1 cup fresh strawberries pureed
1/4 cup fresh strawberries pureed(yes you will need this separate)
1/4 cup extra virgin organic coconut oil
1 tsp vanilla extract
2 tsp ground flaxseed
3/4 cup coconut flour
1/2 cup almond flour
2 TBSP chia seeds
1 TBSP baking powder
3/4 tsp salt
Preheat the oven to 350 degrees.
Mix ALL the ingredients together. I used a kitchenaid.
Prep a muffin pan with 12 cupcake liners.
Pour mixture into prepared pan.
make a finger indent in each muffin and pour a little fresh strawberry puree in the center, just enough to fill your indent.
Cook for 30 minutes.
Serve immediately or store in an airtight container in the fridge.
Yes I WILL plank for pizza. And since I always get emails asking where I got the shirt, it is from Wicked Custom Apparel. SO many people think I just eat fruits and veggies and that is SO far from the truth. I am a recovering processed food addict. Cancer turned all that around for me and now I help others eat healthy food that they LIKE! Enter pizza. While yes, even just having some regular pizza from time to time is not a horrific thing... I would rather hack it and be able to eat it whenever the heck I want. So ... that is what I did.
Things to be careful for when making homemade pizza:
1. Make your own sauce or DILIGENTLY read the ingredients of any sauce you use. If it says sugar, its a no. Tomatoes are sweet enough, you do not need to add sugar for great pizza sauce. Please see the recipe at the end of this post for fantastic healthy pizza sauce that counts as a half a veggie serving IF YOU READ the ingredients of the tomato paste and tomato sauce you use. I make my own, cuz I grow my own, but there are plenty of healthy no sugar added canned tomato sauce and canned tomato paste out there.
2. Use a good healthy crust. I have found pita to be the healthiest option if not wanting to make from scratch.
I use Toufayan Organic Sprouted Wheat Tortillas.
Sprouted grains have many health benefits. It's the result of catching the sprouts during the germinating process. This germinating process breaks down some of the starch, which makes the percentage of nutrients higher. ... Those nutrients include folate, iron, vitamin C, zinc, magnesium, and protein.
These pita's are not gluten free, but there ARE gluten free pitas out there if you need them! you can also make them using my recipe here. Gluten Free Pita Bread Recipe
When I was in high school I used to bring every day 1 individual red baron frozen pizza that I plopped in the microwave and almost always burnt the roof of my mouth upon my first bite. That pizza was full of additives, processed foods, and chemicals. Everything we put in our bodies helps or hinders... this hindered I am sure. Hello... I am a cancer survivor after all. All those pizzas add up, and I am sure played a small part in my future illness. Not to mention, they aren't even that great. What a waste. Empty fuel for my growing body. But when you know better... you do better... then you teach others! So here is how I turned it around...
These clean pizzas taste better. I mean WAY better.
EVERYONE in my family wanted seconds and asked for me to send it in their lunch the next day too. Great hot or cold ( I love cold pizza).
This recipe is for EVERYONE because it can be catered to individual tastes. If you only like cheese, just add cheese! (but be sure to get your veggies in somehow! If you hate veggies, take a scoop of Greens every day. You can get those here...
Course I will ALWAYS recommend Shakeology daily to keep your body fueled with all proper nutrients, including 5 salads of greens. You can get that HERE.
Now On to the pizza... Here is how its done.

oh yeah... here is the
Easy fast clean Pizza Sauce
1 6 oz can tomato paste.
1 15 oz can tomato sauce 1-2 TBS oregano to taste 2 TBS Italian seasoning ½ tsp garlic powder ½ tsp onion powder ½ TBS garlic salt ¼ tsp freshly ground black pepper
Mix tomato paste and sauce together in a medium size bowl until well combined. Add the rest of the ingredients (oregano, Italian seasoning, garlic powder, onion powder, garlic salt, and pepper) and mix well! Store in an airtight container in the fridge.
I am loving my new nutrition plan! It comes with SO MANY easy healthy yummy things I can make ahead of time for quick on the go fuel that is YUMMY. There are also a TON of awesome new recipes to try in the community.
I also like to use my nutrition education and tweak the recipes to suit my needs. I NEVER eat processed sugar. EVER. I WILL have organic pure cane juice in small amounts, just like I would have small amounts of pure maple syrup. All good, all not processed. SO I tweaked this recipe to be sugar free and just as delicious.
Original recipe called for sour cream (not high in nutrition) and powdered sugar (um... no). So easy to fix just 2 small things and make it a protein powerhouse vs. a small sugar spike. No need for any of that in my normal day to day. I save that for special occasions and ALWAYS feel gross after. Im all about feeling good and these muffins fuel me. These taste amazing I like to pop one of these in the middle of the day or after a meal as a dessert. I never feel deprived, always full and completely happy. You should give it a shot. Email me at momwhatsfordinner@yahoo.com to get started, and if you are already on it, comment below how much you like these!
Happy 2nd day of April! Spring has arrived and that means so many are starting to finally work on their summer body. Even though I believe EVERY body is a Summer body, I LOVE to help people get HEALTHY. So that is the focus for me.
This dish goes out to all of those people that struggle to get in all their veggies. Also for people like me that LOVE to have their eggs on top of hashbrowns or toast... or if I am being honest ... BOTH!
Nothing wrong with that from time to time, or every day if you want to carb load in the morning and need a nap after. I am all about FUEL and getting ENERGY. So these bad boys go perfectly under eggs, or on their own on the side and yep... they are veggies! Kids like them too. My daughter has gobbled 4 of these since I made them yesterday and her VERY finicky husband likes them too! Even though they are adults, they eat like kids lol!
Give them a try then come back here and tell me what you think!

I was sitting in the dentist chair last night and my dentist was all absorbed in hearing about my cancer battle. I was surprised at how hungry he was to hear my story. Turns out his wife is just this year, a 5 year survivor of breast Cancer. Tears welled up in his eyes as he listened to me speak about the process and how we found out and what the year long battle was like. He then looked at me in the eyes and said:
"Why is it that we as people have to wait for our lives to be at risk before we do something about what we are putting into our bodies?"
He hit the nail on the head. I am sure many of you reading this are just thinking; "well I am fine, I will cross that bridge if I get to it." You will get to it. I promise you. I am just hoping and praying your outcome is as good as mine was. It is rare to live through. Many do, but for the rest of our lives we are "high risk" and we don't have a choice regarding what we put in our bodies after that. We are stuck with high doctor bills and going in for a full work up every 3 months. Being poked and prodded and put in various machines. We are faced every 3 months with our battle and we wait for the phone call that will tell us yay or nay. I hate it.
I agreed with my dentist and we kept on chatting. He is an older wiser man, who was born and raised in the United States, but his family is from Mexico. He spoke of how hard it is for them to find real food in America. He spoke of the processed foods and all the chemicals they learned about during his wife's battle. Again, I agreed with him and proceeded to give him tips on how to avoid produce from U.S.A and Canada. I also started giving him cancer fighting superfood information that he quickly wrote down.
I am one of those people that needs facts. I need to educate myself in order to make proper choices for me and my health. With so many supplements and shakes out there I got overwhelmed and turned off to all things smoothie and supplement for a while. That is until Cancer hit. You get an education, and FAST!
One of my first questions to my doctor, when told about the diet I needed to be on because cancer thrives off of "American Food", was "Why isn't everyone told this? Why is it allowed." The answer was simple. "Freedom." Yep, we are in the land of the free. That means you are free to choose to educate yourself, and you are free not to. The FDA is not approving things they think are great for you. They are simply allowing so many thousands of chemicals in items.... in other words... they have determined what wont kill you now, in that one item. They don't tell you what happens when you continue to eat non-food items day in and day out. Where do those items go? Systs, Tumors, Growths... I have said it all before, but you are still here, so that means you are still interested in learning. That my friend is your first step.
So I set forth to educate myself day in and day out. I spent hundreds of dollars a month buying imported peruvian superfoods, concentrate powders, extracts etc.. It broke the bank, but it was what my body needed. I started to really bounce back and get healthy. Today, one year later I am cancer free.
So what did I learn along the way? I was doing it the hard way. Enter Shakeology. Thanks to some awesome advice from my doctor, who couldn't sell it to me because it is a conflict of interest, but she pointed me to it. You see it has EVERYTHING, and I mean everything and then some, I need to keep my body cancer free and help me shed off all the extra pounds that came with Cancer. For those who have had cancer, they know what I mean. Bloating, water weight, pounds from having to lay around for a year. All of it made me feel awful. THIS is what taking this has done for me!!
- 65 pounds
cancer free
happy
healthy
strong!
I now feel like it is my job to educate those that have not had the cancer battle, or the education that I have had. So sit back and here is why there is not a single other product on the market that compares.
First of all let's talk about cost. Do you have 2 minutes? Please watch to see how there is over $700 in organic superfoods in ONE bag of Shakeology. Get your Shakeology HERE!
It helps me stayCancer FreeIt is my NUMBER ONE solution in my life and I LOVE helping others feel this good. I was able to throw out ALL other subpar vitamins, minerals, probiotics, adaptagens, prebiotics etc... so I SAVE a ton. If you are ready for this solution in your life get yours HERE or EMAIL me.
Do I have your attention yet? Can I show you how much it is for some of these ingredients? Now remember there are 70 of them?
I personally took those pics with my cell phone at my grocery store this week.
Yikes huh?
So now you are probably thinking... well what about other shakes?
Take a second to look at this so you can KNOW WHAT IS IN YOUR SHAKE!
A lot of shakes cause more harm than good. Ours is ALLLLL good!
So what about Isogenix? You have heard such great things about it right? Well... let's compare.
The positives of Isagenix is that it contains 23 grams of protein per serving (compared to Shakeology’s18 grams of protein per serving). Isagenix, like Shakeology, also contains many naturally occurring ingredients which set them apart from other meal replacements. However, I have not found other components that set Isagenix apart from Shakeology.
On the negative side, Isagenix contains 1100% more fat than Shakeology (6 grams compared to less than half a gram). It also contains more cholesterol and sodium than is found in Shakeology and contains 240 calories per serving when Shakeology only has 150 calories per serving.
Isagenix lacks to potency of the vitamins and minerals that Shakeology contains. Isagenix has only 40% of the daily recommended allowance of Vitamin C versus 300% inShakeology. It lacks significance of other vitamins contained in every Shakeology drink such as Vitamin B1, B2, and B3. You would actually have to drink 2-4 Isagneix shakes to get the same concentration of vitamins and minerals found in just 1 Shakeology shake.
I do feel that Isagenix is one of the better meal replacement shakes, but it just does not compare to Shakeology. Shakeology is a step above the rest.
The only other shake that even comes close to Shakeology is Vega One.. however close but no cigar. Why? Well let me tell you....

I made this healthy fish dish last night and it was DIVINE! 100% clean and healthy, but tastes sinful. Super simple too!
Honey Ginger Glaze Ono and Pineapple Salsa Serves: 4-6
Ingredients 1½ lbs Fresh Ono cut into 4-6 pieces ( or any white fish ) ⅓ C coconut aminos ⅓ C honey 3 TBSP ginger root 2 garlic cloves 1 TBSP olive oil ------- Pineapple Ginger Salsa ½ pineapple, pealed, cored, small diced ( about 3 cups) 1 jalapeño- seeds removed, very finely diced ¼ C finely diced red onion 1 tsp finely minced or grated ginger root ½ Cup chopped cilantro ⅛ tsp kosher salt
Instructions Make marinade for the fish. Super easy... put all in a blender: soy sauce, honey, sliced ginger, garlic and olive oil and blend until smooth. Place fish and marinade in a ziplock bag or bowl for 20 minutes or up to 24 hours.
While fish is marinating, make pineapple salsa. Slice and dice half a pineapple into ½ inch cubes and place in a medium bowl. You should have about 3 cups.Toss in the rest of the ingredients. for a milder salsa, add only ½ a jalapeño.
Preheat oven to broil. Prepare Fish. Heat oil in a large heavy bottom skillet, over medium high heat. When oil is hot, place the fish in the skillet, saving the marinade. Sear the fish, on its sides, and then place in the broiler for 8 minutes to cook through. If you like a rare fish, you can skip the broil. For medium rare, a quick 2-3 minute sear on each side is all you need.
Pour the remaining marinade into the skillet and bring to a boil for 30 seconds, until it thickens. Spoon this over the fish, along with a generous amount of pineapple salsa before serving. I served on top of spinach and romaine for a nice salad, but it is great on rice or quinoa too. ENJOY!
Hey hey hey! I am back at it! What a difference a new kitchen makes!
We are slowly getting settled in our new home and I am IN LOVE! It is the most favorite home I have ever had. Just the right size for me. My favorite feature is my kitchen/desk space. I have room to create again. It feels amazing. Then afterwards, I can walk into my yoga room to stretch out and get grounded. Life is pretty amazing right now.
With the holidays, the year end push my team and I do for elite (we made it yay!), the move, and welcoming a new son-in-law... I got behind on my clean eating. So I did what any coach would do and I cleansed that shit out. I do a 3 day cleanse to get my body back in a good alkaline state and then I maintain that with clean eating and Superfoods with an extra boost of Powergreens to boost the oxygen in my blood. Cancer can't live in blood that is in that state, so that is how I stay cancer free. If you have any questions about this, I have tried everything and have easy affordable solutions for you. Hit me up and I can help ya!
So now it is back to clean eating. My husband found some amazing wild caught Salmon. I wanted a moist buttery finish while filling my body with those luscious omega 3's. So I chose to do a low bake.
The Salmon and mustard sauce go SO well with Asparagus, so I combined the recipe. The more greens the better!
The Moistest Baked Mustard Salmon with Asparagus
1 bunch thin asparagus (about 1 pound), trimmed
2 tablespoons olive oil, divided
3/4 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
4 (6-ounce) skin-on salmon fillets
8 teaspoons country-style or whole-grain Dijon mustard
Preheat oven to 275°F.
Line your broiler pan with parchment paper.
Toss asparagus with 1 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on the bottom layer of the broiler pan. Bake asparagus 5 minutes.
Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total.
Prepare the top layer of your broiler pan with parchment paper.
After asparagus has baked for 5 minutes, remove broiler pan from oven. Place prepared salmon fillets skin side down on top sheet of broiler pan. Put top sheet on bottom sheet of broilder pan and return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14–16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates. I served with basmati/quinoa 50/50 blend for added protein instead of just straight carbs.
I am limiting my carbs and upping the protein and veggies because I am doing a MMA style workout program. I am working so hard and don't want to mess up my results with my food choices. Sometimes you NEED comfort food. I have found this to hit the spot. It is refreshing, but also filling and comforting. I don't miss the shell one bit. I do a blend of quinoa and brown rice for my one carb and it is yummy all while adding extra protein.
Enjoy!

Halloween does not need to be filled of all things candy. We all know the kids will be throwing themselves onto all the candy that is handed out. So I like to make healthier options at home. Using Oranges and carving out a Jack-O-Lantern, makes this a playful after school snack.
Halloween Fruit Cups
What you will need:
A pairing knife
Oranges
Items you want to fill the oranges with: apples, strawberries, grapes, pineapple, orange slices, blueberries, Candy, nuts...the possibilities are endless.
Start off by cutting off the top of your orange.
Next you are going to use your knife to cut out the fruit.
Then using your fingers, gently pull out the fruit.
Slice up the fruit you would like to put inside.
Add your fruit to the "pumpkin orange". The citrus keeps the fruit from browning.
I cut the rind off of one of the apples and pushed it through the top of the orange to make a stem.
You can keep them in the fridge up to 24 hours before you serve them.
I am on day 2 of a program. I have plenty of times that I can indulge and have what I want. I go for healthy, not necessarily a ripped body. But, I have been a little too slack lately and it is time to pull in the reigns and stop making excuses. Basically, I am ready to say goodbye to my muffin tops I gained from one too many Moscow Mules on Safari in Africa. It was worth it at the time. I am ALL about work hard, play hard. My friends... it is time to WORK HARD!
Don't get it twisted. I WILL still be partaking in National Taco day. I am an American Citizen for goodness sake! I just have learned to make my taco's "clean". I also have learned to eat 2 not 4.
True story.
Tip #1 I always use organic non-gmo corn tortillas. After cancer, I will always and forever be PRO-NonGMO.
Tip #2: Swap out the sour cream for wholesome organic Greek yogurt. Tastes the same and SO MUCH better for ya.
Tip #3: Bake or steam your shells instead of frying them. You lose a majority of the fat and calories by doing this.
Tip #4: Swap the cheese for Avocado. It gives a rich creamy taste and you hardly know you are missing the cheese. It is a healthy fat swap your body will thank you for.
Tip #5 Add extra protein rich greens like spinach and kale to your taco salad mixture.
Here are some of my favorite Taco recipes you can "healthify" with the above tips.
