Parsnip Gratin

 
Today I am excited to bring you this recipe! It is a healthier alternative to my cheesy potato au gratin I usually make. The suprising part... The family likes it even better. I cut out 2/3rds of the heavy cream and switched it to healthy greek yogurt. The parsnips are a zero calorie food, which makes for a much healthier alternative to potatoes. I was so scared to serve this dish to my finicky family, but they loved it! 


Gluten-Free Parsnip Gratin
adapted from Feasting at Home

2 1/4 lbs Parsnips

1 med onion
2 Cups greek yogurt
1 cup heavy whipping cream
1/4 tsp fresh ground nutmeg
1/4 tsp pepper
1 1/4 tsp kosher salt
1 Tbsp Fresh minced Thyme
3 large minced cloves garlic
6 ounces, grated sharp cheddar cheese



Preheat oven to 400 F.


Peel Parsnips. Using a mandolin, slice parsnips to 1/8 thin slices. If you don't have a mandolin, slice them as thinly as possible.
Dice the onion. Grate the cheese.Generously grease a 6x 9 inch baking dish with butter or cooking spray for a healthier alternative.
In a bowl add greek yogurt, whipping cream, salt, nutmeg, thyme, pepper, and garlic.Stir. This is your cream mixture. 
Layer the parsnips and onion and a layer of the cream mixture, layer of the grated cheese sprinkle some of the thyme. 
Press down. Repeat, pressing down in between layers. Keep repeating until all the ingredients are used up. I put two sticks in mine before covering with foil to prevent the foil from sticking to the cheese.

Cover securely with a lid or foil and bake for 50 minutes on the middle rack. 
Bake another 15 minutes uncovered , or until golden and bubbly. It is important to let it sit at room temp for 10 - 15  minutes before serving, so it sets and thickens.

Chocolate Cheesecake Bites #SundaySupper

 
I want to say a BIG welcome to all you #SundaySupper readers! I am excited to be a part of this amazing group of bloggers! This weeks theme is Cheesecake! As my husband would say: "BUMMER!". We are huge Cheesecake lovers. I love to make it every which way I can. One of my most popular blog posts ever is my Caramel Cheesecake bites. You can view the recipe HERE. Since it was so popular, I figured I would make a bunch of different cheesecake bites in the months to come. My husband wishes I would make a new set each day, but our waistlines cannot handle that, so it is a once in a while special treat. I hope you enjoy them as much as we do!!!


Gluten-Free Chocolate Cheesecake Bites
Makes 6 Cheesecake bites
8 ounces cream cheese
2 eggs
1/8 cup sugar
1/2 tsp vanilla

Chocolate Topping:
8 ounces good dark chocolate
2 ounces heavy whipping cream

crust:
1/2 cup almond meal flour
1/4 cup slivered almonds
1/4 cup sugar in the raw
1/8 teaspoon fine Sea Salt
1/8 teaspoon Baking Soda
1/8 cup melted butter

Pre-heat the oven to 350 degrees F.
Crush your slivered almonds.
In a mixing bowl whisk together the almond flour, almonds, baking soda, and salt. Add the butter and combine with a spoon.

Line a muffin tin with liners. Push the almond mixture into the bottom of the liners.
Bake for 10 minutes to set. Set aside.
Turn oven down to 300°.
In a mixing bowl, add cream cheese, vanilla, sugar and eggs. 
Beat until light and fluffy.
Spoon mixture into the muffin tins with prepared almond crust.

Bake for 40 minutes.

Take cheesecakes out of the oven when they are done. Once cool, the middle will slightly fall and this is the perfect indent for the chocolate.
Melt chocolate and whipping cream in your microwave for 3 minutes at 50% power. Take out and stir until smooth.
Spoon about 1 tablespoon chocolate over each cheesecake. Refrigerate for at least 2 hours before serving.

Chocolate Mousse #SundaySupper

 
I am excited to be participating for the first time in #SundaySupper. This weeks theme is Valentines day!
Is everyone ready for Valentines day? What are your plans? I personally love this special day. I am so blessed to be with my one true love, and I love that there is a holiday where we can celebrate our love for one another. It is also a great excuse to make something sweet for the family. For me, this day is all about chocolate, love and kisses.
I used to think that Mousse was hard to make. It really isn't. You just have to pay attention to detail and be patient. If you do that, then it is really easy! I suggest making it the day before because it is best served cold. 



Just follow the steps in the recipe and you can have this wonderful dessert to serve to your family or your love. It takes time in between steps, but the amount of time you are actually working is very little.




This Chocolate Mousse is so smooth and decadent! It is definitely one of our favorites. Serve it to the kids with a big glass of milk and serve it to your hunny with a nice red wine. 




Chocolate Mousse
Adapted from Bon Appétit | February 2013

3/4 cup chilled heavy cream, divided

4 large egg yolks
1/4 cup espresso or strong coffee, room temperature
1/8 teaspoon kosher salt
3 tablespoons sugar, divided
6 ounces semisweet chocolate (61-72% cacao), chopped
2 large egg whites

Beat 1/2 cup cream in a medium bowl until stiff peaks form; cover and chill.





Combine egg yolks, espresso, salt, and 2 tablespoons sugar in a large metal or double broiler. (do not allow bowl to touch water). Cook, whisking constantly, until mixture is lighter in color and almost doubled in volume and an instant-read thermometer inserted into the mixture registers 160°F, about 1 minute.


Remove bowl from pan. Add chocolate; whisk until melted and smooth. Let stand, until room temperature.

Beat egg whites in another medium bowl on medium speed until foamy. With mixer running, gradually beat in remaining 1 tablespoon sugar. Increase speed to high and beat until firm peaks form.



Fold egg whites into chocolate in 2 additions; fold whipped cream into mixture just to blend.

Divide mousse among  4-ounce ramekins. Chill until firm, at least 2 hours

Before serving, whisk remaining 1/4 cup cream in a small bowl until soft peaks form; dollop over mousse.
