I was sitting in the dentist chair last night and my dentist was all absorbed in hearing about my cancer battle.  I was surprised at how hungry he was to hear my story. Turns out his wife is just this year, a 5 year survivor of breast Cancer. We are faced every 3 months with our battle and we wait for the phone call that will tell us yay or nay. I hate it. 



I agreed with my dentist and we kept on chatting. He is an older wiser man, who was born and raised in the United States, but his family is from Mexico. He spoke of how hard it is for them to find real food in America. He spoke of the processed foods and all the chemicals they learned about during his wife's battle. Again, I agreed with him and proceeded to give him tips on how to avoid produce from U.S.A and Canada. I also started giving him cancer fighting superfood information that he quickly wrote down. 



I am one of those people that needs facts. I need to educate myself in order to make proper choices for me and my health. So what about Isogenix? You have heard such great things about it right? Well... let's compare. 



The positives of Isagenix is that it contains 23 grams of protein per serving (compared to Shakeology’s18 grams of protein per serving). Isagenix, like Shakeology, also contains many naturally occurring ingredients which set them apart from other meal replacements. However, I have not found other components that set Isagenix apart from Shakeology.

Healthy Protein Coconut Cranberry muffins

I am doing super great on my goals. My daughter gets married in a little over 2 weeks and I want to make sure I look and feel good for the event. But man I do love carbs. Carbs don't love me. I eat healthy carbs like fruit and beans, but grain and I have to break up anytime I am trying to tone up. 

I got some gorgeous cranberries in my CSA Organic box, so I decided to use them in a healthy muffin I could reach for when a carb craving comes along. 

Cranberries are misunderstood. People overlook them and reach for traditional berries, when the truth is, they are just as good! I love the tangy tartness it brings to these muffins that are low carb high protein and gluten-free. Enjoy my healthy friends. Nothing better than muffins! 


Healthy Gluten-Free Protein Coconut Cranberry muffins
Makes 12 Muffins

4 tablespoons coconut oil, melted
6 eggs
4 tablespoons whole coconut milk, canned
60 drops liquid stevia drops or sweet drops (vanilla creme is the best) You can insert maple syrup, orange juice, applesauce or any other sweetener alternative here.
1/2 teaspoon pink himalyan sea salt
1/2 cup sifted coconut flour
1/2 teaspoon baking powder

2 cups cranberries, rinsed and chopped.
1/4 cup coconut sugar, or stevia drops, or maple syrup, or orange juice

In large bowl, mix eggs, butter, coconut milk, stevia and salt. 
In smaller bowl, combine sifted coconut flour and baking powder. 
Add dry mix into batter, blending thoroughly until there are no lumps. 
Pour batter into greased muffin tins.
Mix cranberries and sweetener of choice together in a sauce pan and stir over low heat until bubbly. place a TBSP of the cranberry in the middle of each muffin batter in filling dividing into 12 muffins and bake at 400 degrees F for about 15 minutes. Enjoy!

Clean Eating Fish Quinoa Rice Bowls

I am limiting my carbs and upping the protein and veggies because I am doing a MMA style workout program. I am working so hard and don't want to mess up my results with my food choices. Sometimes you NEED comfort food. I have found this to hit the spot. It is refreshing, but also filling and comforting. I don't miss the shell one bit. I do a blend of quinoa and brown rice for my one carb and it is yummy all while adding extra protein.

Clean Eating Fish Quinoa Rice Bowls
For the cilantro lime crema:

1/2 cup Greek yogurt
3 tablespoons chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon minced garlic
a pinch of salt

For the avocado cucumber salsa:
1 red onion, diced
1 avocado, halved, pitted, peeled, and diced
1 small cucumber, diced
3 tablespoons chopped fresh cilantro
the juice of 1 lime

For the fish:
1 lb snapper fish fillet or other white fish
2 tablespoons olive or avocado oil
1/4 cup coconut flour
1 teaspoon cumin
1 teaspoon chili powder
¼ teaspoon cayenne pepper (adjust to taste)
To assemble:
1 cup cooked brown rice
1 cup cooked quinoa
1 cup shredded cabbage
Optional:
fresh cilantro, finely chopped
lime wedges
Instructions
Cilantro lime crema:
Combine all the ingredients for the crema in a blender and blend until smooth. Pour the crema in a bowl, cover and refrigerate until ready to use.

Avocado cucumber salsa:
Place the cucumber, avocado, red onion and cilantro in a bowl. Drizzle with lime juice and season to taste. Mix it gently and set aside.

Fish:
Pat the fish fillets dry with paper towels. Combine the flour and spices in a shallow dish.
Dredge each piece of fish in the flour mixture.
Heat the oil in a large skillet over medium-high heat. Add the fish to the skillet and cook for about 3 minutes on each side. Remove the fish from the skillet and shred with a couple of forks.
To serve, divide the rice between 4 bowls then add the toppings: fish, shredded cabbage, and avocado cucumber salsa. Drizzle the cilantro lime crema, sprinkle the chopped cilantro and serve with lime wedges.

The Best Guacamole


I love this time of year here in California. It is not uncommon to pull up to a stop sign and there be a little farmer selling bags of fresh picked avocado's for $5. I snag a bag any time I can. They grow abundantly here, and it is not uncommon to drive through a neighborhood and have boxes of them on the curb labeled "free". That is what I used to do with my lemons and limes. 

I used to be afraid of Avocado's because of their fat. After having Cancer and the doctor telling me it is a perfect fat. A fat my body needs. I was so happy! I use them in everything from ranch dressing, to salads and sandwiches. More often than not I don't even need mayo or a sauce. They make everything creamy and delicious!

So here is my all time favorite way to make Guacamole. Creamy and Chunky at the same time. It is naturally gluten-free! We went over to our friends for game night and because I didn't want to be tempted to eat food that was bad for me, I brought sliced cucumbers to dip into it. Yum! Everyone else loved the Organic chips I brought, but I was a good girl! :)

Guacamole
by Mom What's For Dinner


1 cup diced sweet onion
4 garlic cloves minced
4 serrano chiles minced (with seeds for spicy)
Juice of 2 limes 
5 ripe avocados 
coarse salt 


Put the onion, garlic, chiles,lime juice and Avocados in a bowl. 

Use a large serving fork and mix up the ingredients. Then press the fork around the sides of the bowl mashing the Avocado. This will make a chunky guacamole. If you like Cilantro, by all means add it. We love it, but I know for some people it is a cringe ingredient. ( I will never understand that way of thinking ). But I aim to please. 
There you go! The best guacamole ever!

Snickerdoodle Superfood Cake Clean and healthy




My daily shakeology is SO MUCH more than a SHAKE.

When I first heard about BeachBody and I heard there was a " shake" I was like NO WAY!!!! if I learned anything from my cancer journey it's that a liquid lifestyle works against you in the long run. I am not a quick fix or gimmick girl.

BUT When I researched shakeology I found it was NOT a meal replacement shake, it was NOT a chemical full weight loss quick fix ... Snickerdoodle Superfood Cake

1 scoop vanilla shakeology
1 TBSP almond butter
1 egg
1/4 tsp baking powder
1 tsp cinnamon
1 TBSP maple syrup
2 tsp almond milk



Mix together and pour in a prepped custard cup ( i just spread in coconut oil with my fingers).

If you want a fully cooked cake like this it is 90 seconds on high in the microwave.

If you want a lava type cake it is 60 seconds.

Healthy Clean Vegan Avocado Peanut Butter Cup Pudding



Healthy Clean Vegan Avocado Peanut Butter Cup Pudding


2 ripe avocados
1 large ripe banana
1/2 cup unsweetened cacao powder
1/2 cup creamy peanut butter
1/2 cup pure maple syrup, OR date paste
1/4 cup almond milk 

Coconut Whipped Cream for topping (recipe below)



Add all ingredients except coconut whip into a food processor and blend until creamy and smooth. 
I layered mine with the Coconut Whipped Cream to make a yummy parfait!
Leftovers will keep in the fridge up to a few days!


Coconut Whipped Cream
1 CAN whole pure coconut milk placed in fridge over night.
8 drops sweat leaf vanilla cream drops

Take out solids from can (use the runny milk for smoothie or other wholesome treat). Add drops and whip. 
BOOM vegan, dairy free, sugar free, awesome whipped cream.

Ginger Red Curry Sea Bass


I served this dish last night and we all loved it. 
Gluten-Free
Soy-Free
Clean Eating - Guilt free
Enjoy!

1 (13.5 ounce) can unsweetened coconut milk
Juice of one lime
2 tablespoons Thai red curry paste
1 teaspoon agave nectar or maple syrup
2 tablespoons minced peeled fresh ginger
2 garlic cloves, minced
1 teaspoon fish sauce
2 tablespoons chopped fresh cilantro plus more for serving
2 tablespoons minced scallions plus more for serving
4 6-ounce Sea Bass
Cooked Brown rice for serving


Combine first 7 ingredients (coconut milk through fish sauce) . Sir together then place your fish in a baking pan and coat both sides of the fist with about half of the sauce. 

Place the rest of your sauce in a medium saucepan. Bring mixture to a boil and simmer until sauce thickens slightly, 8 to 9 minutes. 

Remove from heat; stir in cilantro and green onions. 

Preheat oven to 400 degrees. 10-20 minutes, depending on thickness of fish. Serve fish with hot rice and remaining sauce. Sprinkle with additional cilantro and scallions, if desired.

2 slices sprouted whole-grain bread 
1 tsp. Dijon mustard 
1 oz roasted red bell pepper strips

¼ cup fresh arugula 
¼ cup shredded smoked gouda cheese (1 oz) 
½ tsp. olive oil

Clean Healthy Fat Hollandaise



So you are asking how is this clean? Cashews. That is my answer. Where most hollandaise recipes contain a cube or two or three of butter, this recipe contains none. Instead, it contains cashews. That replacement alone makes it worth it. So for that purpose, this sauce is not Vegan. If you would like it to be Vegan, you can sub 1/4 cup avocado for the egg yolk and boom... vegan. I just wanted my eggs today. I am not afraid of egg yolk, because I eat so clean (no processed foods... that's ezekiel bread under there!) and my cholesterol can't get any lower. I love the clean healthy fat and protein of an egg yolk. Anything man didn't mess with I love. And before I get hate mail, I get my eggs from a reliable source and they are free range and non-gmo vegetable fed, good ole brown eggs. While I make numerous Vegan recipes, I am not Vegan. I love my eggs. 

I also love hollandaise, and it is something I always eat when I am splurging. So this time when I started my Hot for the Holiday's accountability group, I was prepared. Those of us in fitness know we need healthy fat to get to our goals. Now I have a yummy sauce to put on my breakfast, dip my veggies in, pour over my asparagus... and it is basically just nuts with a little avocado oil, a very healthy fat!

Clean Healthy Fat Hollandaise

1 cup raw uncooked cashews (Soaked overnight, drained, but save water)
1/4 cup avocado oil
1/4 cup of the cashew water that is left from soaking
2 egg yolks
1/2 tsp tumeric
1 tsp ground mustard seed
Juice of one lemon 
1 Tbsp Tapatio or Cholula hot sauce
1 tsp salt 
1/4 tsp pepper

Cashews MUST be soaked overnight for this sauce to work. 
Add your water and avocado oil together and heat to just under boiling. You can do this on the stove or the microwave, whatever suits you. 

In the meantime add the soaked, drained, cashews, 2 egg yolks, tumeric, mustard, lemon juice, hot sauce, salt and pepper to a blender and push blend. 

While it is blending, slowly drizzle the water/oil mixture into the blender, this will coagulate the egg yolks while blending the cashews. you may have to run a few cycles of blending and scraping down the sides, until it forms a cream consistency. 

Serve immediately. Store in an airtight container and gently bring back to warmth to serve.
Now go make a killer eggs benedict.

Tangy Tastebuds Salad

Sorry for the horrible shot of this Salad. It really does not do it justice. This is quite simply the best salad I have had in a very long time. Unfortunately where I live it is getting dark really early and I actually eat the food ... hence the dark blurry photo. You will just have to trust me. 

On the last day of my cleanse. Feeling amazing. Eating stuff like this makes me not feel like I am cleansing at all. Love that we get to eat whole foods and real GOOD fats like Avocado. 1 tsp Pink Himalayan Salt, 
1/4 cup Apple Cider Vinegar
Juice of one lime
1/4 cup cilantro diced *optional

Peel, core, and cube Cucumber, Apples, Tomato, and Avocado. You want them to all be cut a similar size. This makes them dance on your tastebuds. Trust me, don't skip making them cubes. Place all prepared produce in a large bowl. Top with salt, vinegar and lime juice. Top with Cilantro if desired. Stir together and serve. 

Store in an closed container in the fridge.

Clean Vegan Thai Ramen


The time has come again for me to do my 3 day cleanse. When I first did the cleanse it was much harder for me. Now it is so easy. I actually feel too full to finish my daily food portions. I love it because you get to eat real food. 

My choice of living consists of this: 
21 days of clean eating. It includes yummy desserts and foods I love. Then I go off clean eating for 4 days. I plan those days as my ladies nights, date nights, etc... I have cocktails and eat pretty much what I want, within reason. Then I start a 3 day cleanse to get out all the crap I put in the last 4 days. Then I start over. I love this lifestyle. I have a date that I know I will get to splurge and have fun, and I have a safe way to remove the sugars from my body. Being a Cancer survivor I am SO BLESSED to have found this product that allows me a little fun! 

My husband only cleanses about twice a year, and he struggles. He is a big eater and because of that, the cleanse is needed from time to time. So this time I was prepared with some of his favorite flavors. We are halfway done and he is feeling great. We had this for dinner last night and he at it also for lunch. It contains the veggies needed and your healthy fat. Totally cleanse safe and clean eating. We loved it and I would eat it on or off the cleanse any day of the week!

The secret is in the red curry paste. 
Ingredients in it are: Red Chili, GarlicLemongrassGalangal (Thai Ginger), Salt, Onion, Kaffir Lime, Coriander, and Pepper.
 It is only 20 calories per serving and 100% cleanse safe! I do sometimes make my own, but since the kids have all moved out, this is SO much easier.

Thai Ramen
Serves 4

1 4oz jar thai kitchen red curry paste
1 13.66 ounce can of thai kitchen organic coconut milk
2 cups vegetable broth
2 Zucchini 
1 Tsp Pink Himalayan Sea Salt

Mixed veggies of choice, I used:
1 onion (sliced)
2 carrots (sliced)
10 mushrooms (sliced)
2 green peppers

Combine one 4 ounce jar of Thai Kitchen red curry paste with one can of thai kitchen organic coconut milk and 2 cups of vegetable broth and bring to a boil.

While bringing to a boil use your zoodle maker to make noodles out of your zucchini. These are very affordable tools you use to make noodles and I recommend every kitchen has one! This is what makes your clean yummy cleanse safe noodles! I peel my zucchini first, but you don't have to. 

Once your broth is at a boil, add your salt and chopped veggies (NOT THE ZOODLES!)
Bring back to a boil and stir constantly cooking for 5 minutes. 
Add in your zoodles for 30 seconds (just enough to heat the noodles) then divide between 4 bowls and serve immediately!!!

Salt and pepper to taste

Clean Healthy Banana Pancakes



it is the weekend and you usually make breakfast for the fambam. Why not clean it up with this scrumptious recipe. Full of healthy ingredients you can be proud to serve your family. 

Healthy CLEAN Banana Pancakes

Ingredients:
1 large egg, lightly beaten 
1 Tbsp. coconut oil, melted
1 cup unsweetened almond or coconut milk
¼ cup plain greek yogurt
1 very ripe medium banana, mashed
1 Tbsp. raw mountain honey (please don't get your honey from a store, help save the bees!)
3/4 cup coconut flour
1/4 cup almond flour
¼ cup old-fashioned rolled oats
1½ tsp. baking soda
½ tsp. pink himalayan sea salt
coconut oil
4 tsp. pure maple syrup

Preparation:
1. Combine egg, oil, milk, yogurt, banana, and honey in a medium bowl; whisk to blend. Set aside.
2. Combine flours, oats,  baking soda, and salt in a medium bowl; mix well.
3. Add flour mixture to egg mixture; mix until just blended.
4. Heat large nonstick skillet, lightly coated with coconut oil, on medium-high heat.
5. Spoon about ¼ cup batter into skillet for each pancake; cook for 1 to 2 minutes or until bubbles form on top.
6. Flip with spatula and cook for 30 seconds.
7. Repeat with remaining batter.
8. Serve pancakes topped evenly with 100% pure maple syrup.
