Healthy Clean Chicken Piccata

Officially halfway through my new nutrition program and I am feeling fantastic. I think what I love most about my job is that I do the program with my clients and in turn I get to live my happiest healthiest life because you are what you eat. Our gut is our 2nd brain. Technically known as the enteric nervous system, the second brain consists of sheaths of neurons embedded in the walls of the long tube of our gut,. The second brain contains some 100 million neurons, more than in either the spinal cord or the peripheral nervous system. The second brain informs our state of mind. A big part of our emotions are influenced by the nerves in our gut. 
Simply translated... 
Put good fuel in ... your brain responds good.
Put bad fuel in... your brain responds bad. 
Which is why I constantly say...
If you are depressed... fix your diet.
If you have anxiety... fix your diet. 

You can pretty much have the food you like, you just have to be willing to be your own advocate and cook it, or find and support others that cook it. For instance. I LOVE chicken piccata, but traditional recipes have a ton of butter  (saturated fat). It just isn't worth it anymore because that makes me tired and lethargic. I want to feel GOOD and have ENERGY! Enter this heathified chicken piccata that tastes downright delicious. I don't miss a thing. Just a few tweaks and boom!

If you are in my nutrition program this counts as 1 RED, 1/4 YELLOW (if you really want to be strict, or you can omit) and 2 tsp per serving. If you are not in my nutrition program but want to be... send me an email and I will send you over deets!

Gluten-Free Healthy Chicken Piccata

1 lb boneless chicken breasts
1 Tbs plus 2 tsp of Ghee
1 Tbs olive oil
1/2 tsp garlic powder
salt and pepper
1/2 cup of tapioca flour
1/2 cup of fresh lemon juice
2 lemons, sliced
1 Tbs lemon zest
1/2 cup organic chicken broth
fresh parsley if you have some!


Mix together rice flour, garlic powder, and a sprinkle of salt and pepper. Lightly dredge each piece of chicken in flour mixture, shaking off excess.

Over medium heat, melt butter mix in olive oil. Brown chicken on each side for 2-3 minutes. Transfer to a plate and keep warm.

Turn heat up to high and deglaze your pan with the lemon juice and chicken broth. Reduce heat to medium and stir liquid with the browned pan drippings from chicken.

Add chicken back to pan and top with lemon zest. Simmer on low heat for about ten minutes. Sauce should thicken a bit. Top with lemon slices and simmer for 5 more minutes. Sprinkle with additional salt and pepper if desired and top with fresh parsley, if you have it.

Delicious served with brown rice and steamed veggies!

Chicken fried cauliflower rice


Yes this recipe is keto friendly... no I don't follow a keto diet. I prefer eating for LIFE and that means BALANCED. I do not support the keto diet because of my education in nutrition, and low-carbohydrate diets may increase your risk for kidney damage, osteoporosis, abnormal heartbeat, lipid abnormalities and even sudden death. If your ketogenic diet is high in protein, it could also increase your risk for diabetes, cancer and overall premature mortality. So why on earth would I ever try to get my clients to go keto? I wouldn't. I teach my clients how to live long happy healthy abundant lives. I do NOT think one needs to go through life without ever having grain or treats again. All things in balance. 

I do however, know that Carbohydrates are best consumed during the first half of your day, because carbohydrates give you ENERGY. So I have my healthy carbs for breakfast and lunch and keep them out of my dinner. Enter this healthy Chicken fried cauliflower rice. With about 300 calories per serving, it gives you a fantastic protein packed dinner that is fiber filled leaving you full and satisfied. Here is this Healthy Chicken fried cauliflower rice recipe. Enjoy!

1 head of cauliflower, blended till it looks like rice (about 4 cups)
2 tablespoons sesame oil
1 lb. boneless chicken breast, chopped into 1/2″ dices
4 eggs
3 carrots, diced
1 onion, diced
2 garlic cloves
1/3 cup coconut aminos -or- braggs aminos if I use braggs I add a little honey
2-3 tablespoons sriracha sauce optional
1/4 cup sliced green onions (garnish)


Add cauliflower florets to a food processor or blender. Blend until cauliflower resembles small grains of rice. Set aside. -or- purchase 1 bag of cauliflower rice from trader joes

Heat a wok or large skillet to medium high heat.

Add in 1 tablespoon of sesame oil to pan.

Add diced chicken and saute for 4-5 minutes, tossing throughout.

In another pan on the side scramble and cook up the eggs. Set aside

Push chicken over to one side of the pan, add 1 tablespoon of sesame oil on the other side along with carrots, onion, and garlic.
Saute the vegetables for 4-5 minutes.

Next add in the cauliflower rice, along with the coconut amino acids.

Add eggs, toss everything together and cook for 2-3 minutes.

Garnish with sliced green onions.

Clean Eating Fish Quinoa Rice Bowls

I am limiting my carbs and upping the protein and veggies because I am doing a MMA style workout program. I am working so hard and don't want to mess up my results with my food choices. Sometimes you NEED comfort food. I have found this to hit the spot. It is refreshing, but also filling and comforting. I don't miss the shell one bit. I do a blend of quinoa and brown rice for my one carb and it is yummy all while adding extra protein.

Clean Eating Fish Quinoa Rice Bowls
For the cilantro lime crema:

1/2 cup Greek yogurt
3 tablespoons chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon minced garlic
a pinch of salt

For the avocado cucumber salsa:
1 red onion, diced
1 avocado, halved, pitted, peeled, and diced
1 small cucumber, diced
3 tablespoons chopped fresh cilantro
the juice of 1 lime

For the fish:
1 lb snapper fish fillet or other white fish
2 tablespoons olive or avocado oil
1/4 cup coconut flour
1 teaspoon cumin
1 teaspoon chili powder
¼ teaspoon cayenne pepper (adjust to taste)
To assemble:
1 cup cooked brown rice
1 cup cooked quinoa
1 cup shredded cabbage
Optional:
fresh cilantro, finely chopped
lime wedges
Instructions
Cilantro lime crema:
Combine all the ingredients for the crema in a blender and blend until smooth. Pour the crema in a bowl, cover and refrigerate until ready to use.

Avocado cucumber salsa:
Place the cucumber, avocado, red onion and cilantro in a bowl. Drizzle with lime juice and season to taste. Mix it gently and set aside.

Fish:
Pat the fish fillets dry with paper towels. Combine the flour and spices in a shallow dish.
Dredge each piece of fish in the flour mixture.
Heat the oil in a large skillet over medium-high heat. Add the fish to the skillet and cook for about 3 minutes on each side. Remove the fish from the skillet and shred with a couple of forks.
To serve, divide the rice between 4 bowls then add the toppings: fish, shredded cabbage, and avocado cucumber salsa. Drizzle the cilantro lime crema, sprinkle the chopped cilantro and serve with lime wedges.

Halloween Fruit Cups


Halloween does not need to be filled of all things candy. We all know the kids will be throwing themselves onto all the candy that is handed out. So I like to make healthier options at home. Using Oranges and carving out a Jack-O-Lantern, makes this a playful after school snack. 


Halloween Fruit Cups


What you will need:
A pairing knife
Oranges
Items you want to fill the oranges with: apples, strawberries, grapes, pineapple, orange slices, blueberries, Candy, nuts...the possibilities are endless. 

Start off by cutting off the top of your orange.
Next you are going to use your knife to cut out the fruit. 
Then using your fingers, gently pull out the fruit.
Slice up the fruit you would like to put inside. 
Add your fruit to the "pumpkin orange". The citrus keeps the fruit from browning.
I cut the rind off of one of the apples and pushed it through the top of the orange to make a stem. 




You can keep them in the fridge up to 24 hours before you serve them.

The Best Guacamole


I love this time of year here in California. It is not uncommon to pull up to a stop sign and there be a little farmer selling bags of fresh picked avocado's for $5. I snag a bag any time I can. They grow abundantly here, and it is not uncommon to drive through a neighborhood and have boxes of them on the curb labeled "free". That is what I used to do with my lemons and limes. 

I used to be afraid of Avocado's because of their fat. After having Cancer and the doctor telling me it is a perfect fat. A fat my body needs. I was so happy! I use them in everything from ranch dressing, to salads and sandwiches. More often than not I don't even need mayo or a sauce. They make everything creamy and delicious!

So here is my all time favorite way to make Guacamole. Creamy and Chunky at the same time. It is naturally gluten-free! We went over to our friends for game night and because I didn't want to be tempted to eat food that was bad for me, I brought sliced cucumbers to dip into it. Yum! Everyone else loved the Organic chips I brought, but I was a good girl! :)

Guacamole
by Mom What's For Dinner


1 cup diced sweet onion
4 garlic cloves minced
4 serrano chiles minced (with seeds for spicy)
Juice of 2 limes 
5 ripe avocados 
coarse salt 


Put the onion, garlic, chiles,lime juice and Avocados in a bowl. 

Use a large serving fork and mix up the ingredients. Then press the fork around the sides of the bowl mashing the Avocado. This will make a chunky guacamole. If you like Cilantro, by all means add it. We love it, but I know for some people it is a cringe ingredient. ( I will never understand that way of thinking ). But I aim to please. 
There you go! The best guacamole ever!

Clean Spicy Korean Barbeque Chicken

I shared the makings of this dish the other night on my snapchat feed. If you aren't following me, my snapchat is: csilbaugh I share a lot of step by step how to cook clips. 

This is one of my favorite ways to each Chicken. I add extra ginger because I love it, AND ginger can also destroy ovarian cancer cells. Ovarian was just one of the types of Cancer I had. I LOVE to be proactive and have my food be my medicine. Plus it tastes oh so good

Clean Spicy Korean Barbeque Chicken

1lb Organic Free Range Chicken Thighs

For the Marinade:
⅔ cup braggs amino acids
¼ cup mirin
1 tablespoon fresh minced or crushed ginger
1 tablespoon toasted sesame oil
2-3 tablespoons maple syrup
1 tablespoon sambal oelek (spicy chili paste)
5 cloves garlic


Preheat oven to 350 degrees.
Place all of the marinade  ingredients in a food processor or blender until smooth. 
Pour into a large ziplock bag and add your chicken thighs. Marinade for 1 hour to overnight keep in the fridge.

Pull the Chicken out of the sauce and pour the remaining sauce into a saucepan and bring to a boil then reduce to a simmer stirring frequently. 

While the sauce is simmering heat a very heavy pan over high heat. add the Chicken to the pan with a little oil if Let the Chicken sit for 2 minutes to get a golden brown sear, flip and cook the other side. Remove from pan, slice and add back to pan. Top with sauce and stir.

Serve over rice, quinoa or your favorite grain and steamed veggies.

Healthy Superfood Chocolate Lava Cake

1 scoop chocolate shakeology
1 egg
1/4 tsp baking powder
1 TBSP maple syrup
3 TBSP almond milk

mix together and pour in a prepped custard cup ( i just spread in coconut oil with my fingers).

If you want a fully cooked cake it is 90 seconds on high in the microwave.

If you want a lava type cake it is 60 seconds.

Clean Vegan Thai Ramen


The time has come again for me to do my 3 day cleanse. When I first did the cleanse it was much harder for me. Now it is so easy. I actually feel too full to finish my daily food portions. I love it because you get to eat real food. 

My choice of living consists of this: 
21 days of clean eating. It includes yummy desserts and foods I love. Then I go off clean eating for 4 days. I plan those days as my ladies nights, date nights, etc... I have cocktails and eat pretty much what I want, within reason. Then I start a 3 day cleanse to get out all the crap I put in the last 4 days. Then I start over. I love this lifestyle. I have a date that I know I will get to splurge and have fun, and I have a safe way to remove the sugars from my body. Being a Cancer survivor I am SO BLESSED to have found this product that allows me a little fun! 

My husband only cleanses about twice a year, and he struggles. He is a big eater and because of that, the cleanse is needed from time to time. So this time I was prepared with some of his favorite flavors. We are halfway done and he is feeling great. We had this for dinner last night and he at it also for lunch. It contains the veggies needed and your healthy fat. Totally cleanse safe and clean eating. We loved it and I would eat it on or off the cleanse any day of the week!

The secret is in the red curry paste. 
Ingredients in it are: Red Chili, GarlicLemongrassGalangal (Thai Ginger), Salt, Onion, Kaffir Lime, Coriander, and Pepper.
 It is only 20 calories per serving and 100% cleanse safe! I do sometimes make my own, but since the kids have all moved out, this is SO much easier.

Thai Ramen
Serves 4

1 4oz jar thai kitchen red curry paste
1 13.66 ounce can of thai kitchen organic coconut milk
2 cups vegetable broth
2 Zucchini 
1 Tsp Pink Himalayan Sea Salt

Mixed veggies of choice, I used:
1 onion (sliced)
2 carrots (sliced)
10 mushrooms (sliced)
2 green peppers

Combine one 4 ounce jar of Thai Kitchen red curry paste with one can of thai kitchen organic coconut milk and 2 cups of vegetable broth and bring to a boil.

While bringing to a boil use your zoodle maker to make noodles out of your zucchini. These are very affordable tools you use to make noodles and I recommend every kitchen has one! This is what makes your clean yummy cleanse safe noodles! I peel my zucchini first, but you don't have to. 

Once your broth is at a boil, add your salt and chopped veggies (NOT THE ZOODLES!)
Bring back to a boil and stir constantly cooking for 5 minutes. 
Add in your zoodles for 30 seconds (just enough to heat the noodles) then divide between 4 bowls and serve immediately!!!

Salt and pepper to taste

Clean Healthy Banana Pancakes



it is the weekend and you usually make breakfast for the fambam. Why not clean it up with this scrumptious recipe. Full of healthy ingredients you can be proud to serve your family. 

Healthy CLEAN Banana Pancakes

Ingredients:
1 large egg, lightly beaten 
1 Tbsp. coconut oil, melted
1 cup unsweetened almond or coconut milk
¼ cup plain greek yogurt
1 very ripe medium banana, mashed
1 Tbsp. raw mountain honey (please don't get your honey from a store, help save the bees!)
3/4 cup coconut flour
1/4 cup almond flour
¼ cup old-fashioned rolled oats
1½ tsp. baking soda
½ tsp. pink himalayan sea salt
coconut oil
4 tsp. pure maple syrup

Preparation:
1. Combine egg, oil, milk, yogurt, banana, and honey in a medium bowl; whisk to blend. Set aside.
2. Combine flours, oats,  baking soda, and salt in a medium bowl; mix well.
3. Add flour mixture to egg mixture; mix until just blended.
4. Heat large nonstick skillet, lightly coated with coconut oil, on medium-high heat.
5. Spoon about ¼ cup batter into skillet for each pancake; cook for 1 to 2 minutes or until bubbles form on top.
6. Flip with spatula and cook for 30 seconds.
7. Repeat with remaining batter.
8. Serve pancakes topped evenly with 100% pure maple syrup.

Healthy Raw Vegan Pumpkin Pie Cookies



Listen, you can eat healthy and enjoy the flavors of fall. These healthy cookies are so fast and easy to make, and they taste divine!

Healthy Raw Vegan Pumpkin Pie Cookies
1 1/2 cups pitted medjool Dates
½ cup raisins
1 1/2 cups almonds
1/2 cups walnuts
2 tablespoons pumpkin pie spice
1 tsp. cinnamon
2 TBSP Pure Organic Pumpkin puree

Add Almonds and Walnuts to a food processor. Process until nuts resemble bread crumbs. 
Put remaining ingredients in food processor 
and process until fully combined.
Press into an 8x8 pan that is lined with parchment paper.

Banana Berry Power Bowl


SO what is for breakfast? I start my day with a superfood shake and then I go workout. When I come back, I am ready for some packed full of protein yumminess and I eat something like this on most days. Here was today's Banana Berry Power Bowl, When you eat this you get all your daily nutrients in one bowl. It has 5 salads, all your polynutrients, omega 3's, antioxidants, and cancer fighting superfoods. 


Christi's Power Granola

Makes a big batch 

1 cup coconut oil
3 cups slivered almonds
1 cup steel cut oats
1/2 cup PURE  maple syrup
Coconut flakes

Preheat the oven to 325 degrees.
Melt the coconut oil and stir together with almonds,  oats, and maple syrup. 
Place on a large cookie sheet or pizza pan spreading it out as much as you can.

Bake and every 15 minutes pull out and flip over. Do this for 45 minutes. Now pull it out and flip and top with coconut flakes. Place back in the oven for 10 minutes.. check the flakes, if they are not golden, place back in for 5 minutes at a time until golden brown. 

Stir granola all together and let cool for 10 minutes. 
Add:

1/2 cup hemp hearts
1/2 cup chia seeds
2 cups rolled dates 

Stir together and serve, or store in an airtight container. I make this batch on Sunday night and it lasts us the week. :)

For the berry power bowl I used.
1/2 frozen banana
1/2 cup frozen strawberries
1/2 cup greek yogurt
1/2 cup almond milk
1/4 cup organic orange juice

Blend. Top with 3/4 cup power granola, 1/2 sliced banana, blueberries. Serve :)
