Cucumber, Tomato, and Onion Salad



I love this time of year. Our local farmers market in little Italy is so much fun to shop! The tomatoes are sweeter, sweet onions are available everywhere, my herbs in abundance on my window. Spring is here. Veggies are a staple. 
I wanted to make a lite salad that let the sweet natural flavors in Spring Veggies shine.  This salad hit the spot. So healthy and wholesome! Enjoy!


Cucumber, Tomato, and Onion Salad

1 Cucumber peeled and thinly sliced
1 cup cherry tomatoes, halved
1/4 sweet onion, very thinly sliced

2 tablespoons chopped fresh parsley 
2 tablespoons vinegar
1 tablespoon olive oil
Salt and freshly ground black pepper

In a large serving bowl, toss together the cucumbers, cherry tomatoes, onion, parsley, vinegar, olive oil, salt, and pepper, to taste. Let the salad stand for 10 minutes before serving.
