Parents and Kids Yoga and Nutrition Workshop

Open to boys and girls, ages 6 and up, this creative workshop is a collaboration between Cookbook and Guide book Author, Christi Silbaugh and 200 Hour Yoga Certified Instructor, Heather Foat. Healthy Asian Lettuce Cups

Today I am sharing one of the recipes in the book. I have been making all things healthy in this house, and I have never felt better. I started training 5 months ago and I am on cloud 9! I think as long as you have things to eat that you like, you won't splurge on things that are bad for you. One easy way to cut down on calories is to use lettuce as your wrap, rather than a carb.

This is a lightened up version of the PF Changs lettuce wraps. To make sure they are gluten-free use my recipe for gluten-free hoisin sauce.
Serves 4
1 lb. Chicken Breasts, chopped.
1 Tbsp sesame oil
1 clove garlic, minced
1/8 tsp. ground ginger
2/3 cup thinly sliced green onions (about 4)
1 (8 oz) can sliced water chestnuts, drained and coarsely chopped
12 Butter lettuce leaves
3 Tbsp gluten-free hoisin sauce
2 Tbsp gluten-free soy sauce -or- braggs amino acids
1 Tbsp rice vinegar
2 tsp. roasted red chili paste
1/8 tsp. pink himalayan salt
Heat 1 tablespoon of sesame oil in a large nonstick skillet over medium-high heat. Add chicken, garlic and ginger to the pan and cook for about 6 minutes or until chicken is cooked through.

Meanwhile in a small bowl, whisk together hoisin, soy sauce, rice vinegar and roasted red chili paste and drizzle over the chicken mixture. Toss to coat completely.
Add about 1/4 cup chicken mixture to each lettuce leaf, serve and enjoy!

Cheesy Broccoli Quinoa and Giveaway
My daughter and I are Quinoa (keen-wa) fanatics. It is the perfect grain. Gluten-Free, packed with protein and so tasty! I use it as a substitute for barley alot. I make Quinoa patties, all the time and also use it in casseroles as a substitute for rice. We eat a lot of rice and it is nice to have other things to eat. it holds its form and texture so much better than rice does. This dish is one of our favorite. It tastes like a macaroni and cheese dish, only much healthier. If you love a good broccoli cheddar soup, you are going to love this dish. Same flavors, but with some texture.
Cheesy Broccoli Quinoa
adapted from Closet Cooking
1 cup quinoa, well rinsed
1 3/4 cups chicken broth
2 cups broccoli, chopped
1 cup cheddar, shredded
salt and pepper to taste
Add quinoa, broth and broccoli to a large pot.
Cover and bring the quinoa, broth and broccoli to a boil over medium heat, reduce the heat and simmer covered until the broth has been absorbed and the quinoa is tender,about 15-20 minutes.
Mix in the cheese, let it melt and season with salt and pepper.
Serve!

Middle Must Go Madness
kay truth moment. This coach is struggling this time around with my program because of so many amazing things happening. My son just came for a visit. My sister arrives today, then it is my birthday and then I am leaving on an all expense paid trip to a retreat with some of the best life changers. So I know I am not going to be able to 100% stick to the program. So I am planning ahead for my next round. Where I have some space to be home and concentrate on my goals... which are those abs for spring break!!!
No more baggy (albeit oh-so-cozy) sweaters to hide our winter "gotta stay warm" layer!!!! I'm a beach girl now and bikini season is gonna be here SO SOON!!#MiddleMustGoMadness is on the horizon! Time to plan!

Clean Eating Jerk Salmon with Pineapple Salsa

It has been a while since my last article. I am going to try to post once a week now. So much is happening in my life. I wear many hats. My 3rd book is being published next month. I could not be more excited. It is clean eating, and exercise combined. Nourish - The beginner's guide to eating healthy and staying fit, will be hitting the shelves!

One of the other major changes in my life has been my superfood diet. I used to spend all this money making my own whole food, organic, non-gmo concoction to fight off my cancer. I also used to waste a lot of time juicing. Until my doctor pointed me to the whole food, organic, cancer fighting superfood shake! I love to pick apart the ingredients in my shakeology and find out exactly where they came from and what they do for the body. Today I am sharing a nutritional nugget about Amylase, along with one of my favorite green smoothie recipes.
I have been eating clean for over a year now. I don't fall into any one diet category, but I do eat clean. This is one of my most favorite dishes to serve. This dish is full of Caribbean flavor. It is also really really healthy. No need for heavy sauces or bad fats. This is a crowd pleaser. People will think they are indulging or "cheating" but it is extremely good for you.
So I thought I would share the recipe in time for Valentines day. You can make your sweetie a special meal, and still have it be healthy!
1 cup quinoa
2 cups water
For the salsa you need:
2 mangoes, peeled and diced
1/2 pineapple, cored and diced
3/4 cup finely chopped red onion
1/4 cup fresh cilantro, chopped
3/4 teaspoon himalyan salt,
Jerk Seasoning:
1 teaspoon ground allspice
1 teaspoon ground cumin
1/4 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/8 teaspoon cinnamon
4 salmon fillets
1 teaspoon olive oil
Chop and combine mangoes, pineapple, onion, cilantro and 1/4 teaspoon salt in a bowl. Refrigerate until use.
Next make your quinoa. Bring 2 cups of water to a boil. Add your quinoa and bring back to a boil. Cover and turn the stove to lowest setting. The quinoa will be ready in 25 minutes. Lift lid and fluff.
Combine remaining 1/2 teaspoon salt, allspice, cumin, thyme, cayenne and cinnamon in another bowl; rub over both sides of each fillet. Heat oil in a large nonstick skillet over medium-high heat; cook salmon until cooked through, 5 minutes per side, The skin should be able to peel right off after being seared. Serve with salsa.
Mango Puree: one sliced mango in the blender. 1/2 tsp of stevia and juiced 1/2 a lemon. Blend until a puree.
To assemble, I started with a bed of quinoa. Then topped with the mango pineapple salsa. Next add the Salmon. Dollup a little mango puree on top and add a circle of it around the quinoa. Enjoy!
