Potato Tartiflette

Happy days are here again! I am so happy to be healthy again! I feel great to be back to my overachiever self! This past week can just be put in the recycle as far as I am concerned. Nothing like a little bit of potatoes and bacon to turn things around. I was reading a beautiful post by the gourmet traveller and stumbled upon this recipe. It is divine. The troops were pleased. Naturally gluten free and scrumptious!

Gluten Free Potato Tartiflette
Recipe adapted from Gourmet Traveller
1/4 cup olive oil
1 sweet onion, finely chopped
1/4 pound lightly smoked bacon cut into matchsticks
1/2 cup dry white wine
3 large russet potatoes peeled and cubed
1/2 cup whipping cream
1/4 pound parmesan cheese
1/4 pound sharp cheddar cheese
Preheat oven to 375 degrees. 
Heat oil in large deep-sided frying pan, add onion and bacon 
cook over low heat until onion is soft (10 minutes), 
add wine and cook until evaporated (2-3 minutes).
Add potato and cook until tender (10-15 minutes), then season to taste. 
Add cream, cook for 1 minute and remove from heat. 

Lay half the potato mixture in an 8 cup-capacity casserole scatter over half the cheese, then repeat with remaining potato mixture and cheese. 

Bake until dish is golden and bubbling and potato is tender (30-45 minutes). Serve immediately .
