Cinnabon Style pancakes gluten free



Ok, I am finally feeling better! Everything is good with the exception of the antibiotics making me nauseated. Good enough. I can push through it. my daughter and I are having a day of just spending time in the kitchen. to celebrate my recovery i made her a treat.



Cinnabon Style Pancakes gluten free 
adapted from recipe girl

1 cup kinnikinnick gluten free pancake mix
1 tbsp canola oil
3/4 cup cold water
1 egg
CINNAMON FILLING:
1/2 cup butter, melted
3/4 cup brown sugar, packed
1 Tablespoon ground cinnamon
CREAM CHEESE GLAZE:
4 Tablespoons butter
2 ounces cream cheese
3/4 cup powdered sugar
1/2 teaspoon vanilla extract
Start off making the pancake batter: 
In a medium bowl, whisk together mix, water, oil and egg, just until combined.

In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie or garnishing tube and set aside. This should have a consistency similar to toothpaste.
In a medium, microwave-safe bowl- heat butter and cream cheese until melted. Whisk together until smooth; whisk in powdered sugar and vanilla extract; set aside.
Heat large skillet over medium-low heat. Spray with nonstick spray. pour about 3/4 cup batter onto the skillet. Snip the corner of your baggie of filling and squeeze a spiral of the filling onto the top of the pancake. 

When bubbles begin to appear on the surface, flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. 



When ready to serve, drizzle warmed glaze onto the top of each pancake.


I really want someone to tell me they can tell they are gluten free. 

They taste just like a cinnabon and they are the best pancakes I have ever had. Gluten or no gluten. Enjoy!
