Breakfast Quinoa Porridge



The other day I brought to you the fabulous breakfast Quinoa parfaits. I was surprised how amazing Quinoa worked as a breakfast that I wanted to try it again. The thing I love the most about Quinoa, is how it adapts to whatever flavors you are working with. So it works well with both savory and sweet flavor profiles. This super food is so full of nutrients, I can eat it morning noon and night. 

I also love working with almond milk, so I decided to combine the two healthy foods and make a heart healthy breakfast. You can use whatever fruit you like. I personally think bananas work great for added sweetness. Apples add a great crisp texture too. You can make it the night before and reheat it in the morning for a quick healthy breakfast. We were all so surprised how good this porridge was. I don't know why I didn't think to make it as a breakfast before.

Breakfast Quinoa Porridge

2 cups Sweetened Vanilla Almond Milk
1 cup Quinoa, rinsed
4 tablespoons light-brown sugar - or- stevia in the raw
1/2 teaspoon ground cinnamon
1 cup fresh fruit of your choice (I love it with banana or apple)


Bring Almond milk and cinnamon to a boil in a small saucepan. Add quinoa, and return to a boil. Reduce heat to the lowest setting, and simmer, covered for 20 minutes
Serve with additional milk, sugar, cinnamon, and fruit.
