Chocolate Protein Crepes

These chocolate Crepes are divine.
Yes they are gluten free. (since that's the first thing you always ask haha).
They are PACKED full of protein. 
But did you know they were also FULL of Superfoods ?!?!
Yes, 30+ BOTANICAL superfoods!!!!

Being a cancer survivor ... this is my daily non-negotiable. 
My ONE thing that curbs my cravings, helps me stay alkaline, gives me all my vitamins, minerals, adaptagens, amino acids, and a FULL DAY's supply of fruits and veggies. 
All for less than the price of a starbucks. 
WHY people still buy sub-par vitamins and supplements is beyond me. I only take the BEST. Botanical, organic, farm to table supplements. If you would like to try them you can send me an email to ask any questions, or you can check them out here
You can make it as a shake, you can make it as ice cream, pancakes, waffles, granola, yogurt, pudding, pie.... you choose. I would LOVE to help you with this solution in your life. 

Today I chose to make crepes, and they did NOT disappoint. One thing though... I don't fry my crepes. I am crepe flipping inept. So ... I found a solution. I bake them. Problem solved. Super easy and they come out perfect every time.

Chocolate Protein Crepes

4 eggs
1 scoop Shakeology  (I used chocolate)
1 cup 2% Greek Yogurt
1 tsp vanilla extract
nonstick cooking spray
parchment paper

*Optional
Fruit of choice
Coconut whipped cream

Preheat oven to 350.

Combine Eggs, Shakeology, Greek Yogurt, Vanilla Extract, Vanilla Sweet Drops in a blender. 
Blend until fully combined and smooth. 
Prepare a baking sheet (that has edges) with parchment paper that has been lightly coated with cooking spray.
Drop 1/4 cup of batter onto prepared baking sheet. Repeat, being careful to space out the batter into circles. I could only fit 3 per sheet. 
Bake for 10 minutes. 
Remove from oven to cool slightly. 
Add to your plate and top with fruit, and if you want you can add healthy coconut whipped cream like i did. ( canned coconut milk in the fridge over night. pour out liquid and use solids, whip together with vanilla creme sweet drops and WALA!)

Healthy Clean Vegan Avocado Peanut Butter Cup Pudding



Healthy Clean Vegan Avocado Peanut Butter Cup Pudding


2 ripe avocados
1 large ripe banana
1/2 cup unsweetened cacao powder
1/2 cup creamy peanut butter
1/2 cup pure maple syrup, OR date paste
1/4 cup almond milk 

Coconut Whipped Cream for topping (recipe below)



Add all ingredients except coconut whip into a food processor and blend until creamy and smooth. 
I layered mine with the Coconut Whipped Cream to make a yummy parfait!
Leftovers will keep in the fridge up to a few days!


Coconut Whipped Cream
1 CAN whole pure coconut milk placed in fridge over night.
8 drops sweat leaf vanilla cream drops

Take out solids from can (use the runny milk for smoothie or other wholesome treat). Add drops and whip. 
BOOM vegan, dairy free, sugar free, awesome whipped cream.

Clean Healthy Banana Pancakes



it is the weekend and you usually make breakfast for the fambam. Why not clean it up with this scrumptious recipe. Full of healthy ingredients you can be proud to serve your family. 

Healthy CLEAN Banana Pancakes

Ingredients:
1 large egg, lightly beaten 
1 Tbsp. coconut oil, melted
1 cup unsweetened almond or coconut milk
¼ cup plain greek yogurt
1 very ripe medium banana, mashed
1 Tbsp. raw mountain honey (please don't get your honey from a store, help save the bees!)
3/4 cup coconut flour
1/4 cup almond flour
¼ cup old-fashioned rolled oats
1½ tsp. baking soda
½ tsp. pink himalayan sea salt
coconut oil
4 tsp. pure maple syrup

Preparation:
1. Combine egg, oil, milk, yogurt, banana, and honey in a medium bowl; whisk to blend. Set aside.
2. Combine flours, oats,  baking soda, and salt in a medium bowl; mix well.
3. Add flour mixture to egg mixture; mix until just blended.
4. Heat large nonstick skillet, lightly coated with coconut oil, on medium-high heat.
5. Spoon about ¼ cup batter into skillet for each pancake; cook for 1 to 2 minutes or until bubbles form on top.
6. Flip with spatula and cook for 30 seconds.
7. Repeat with remaining batter.
8. Serve pancakes topped evenly with 100% pure maple syrup.

Banana Berry Power Bowl


SO what is for breakfast? I start my day with a superfood shake and then I go workout. When I come back, I am ready for some packed full of protein yumminess and I eat something like this on most days. Here was today's Banana Berry Power Bowl, When you eat this you get all your daily nutrients in one bowl. It has 5 salads, all your polynutrients, omega 3's, antioxidants, and cancer fighting superfoods. 


Christi's Power Granola

Makes a big batch 

1 cup coconut oil
3 cups slivered almonds
1 cup steel cut oats
1/2 cup PURE  maple syrup
Coconut flakes

Preheat the oven to 325 degrees.
Melt the coconut oil and stir together with almonds,  oats, and maple syrup. 
Place on a large cookie sheet or pizza pan spreading it out as much as you can.

Bake and every 15 minutes pull out and flip over. Do this for 45 minutes. Now pull it out and flip and top with coconut flakes. Place back in the oven for 10 minutes.. check the flakes, if they are not golden, place back in for 5 minutes at a time until golden brown. 

Stir granola all together and let cool for 10 minutes. 
Add:

1/2 cup hemp hearts
1/2 cup chia seeds
2 cups rolled dates 

Stir together and serve, or store in an airtight container. I make this batch on Sunday night and it lasts us the week. :)

For the berry power bowl I used.
1/2 frozen banana
1/2 cup frozen strawberries
1/2 cup greek yogurt
1/2 cup almond milk
1/4 cup organic orange juice

Blend. Top with 3/4 cup power granola, 1/2 sliced banana, blueberries. Serve :)

Nourish - The beginner's guide to eating healthy and staying fit has arrived

 

Hard work pays off. Today is one of the happiest moments of my life thus far. My passion is to help you all get healthy and happy and live out your lives the way they were meant to be lived. This is what I consider to be my best work. It will be my last book for a while. For this, my third book is now a tour and we are traveling around the U.S. as well as Bali and Africa to spread awareness of healthy food and movement in your body.

Let's End the trend of obesity in this nation



How can I help others and expect others to get vulnerable with me, if I am not willing to share my weaknesses? 

On the left I was miserable. I was 6 weeks post cancer. I actually had just returned from my first yoga class ever and my daughter made me take the picture. She said one day I would be glad I had it. She knew I had begun my fight for my life back. So while I don't like the way I look, I am proud to have that picture. That is what I fought back from. ONE STEP AT A TIME.

On the right is me today. Just a few minutes ago. Still not happy to have the picture taken, and still my daughter is saying: "you will be glad you did!" So I am baring my soul to you today. 

Please don't wait. I am not done, and I will never ever ever be done because no matter what excuses you are telling yourself, I can promise you there is so much life and happiness on the other side of it. Yes there were times it was hard. Yes there are times I fail and take a mis-step. I am not perfect, but I have found the solution that works. Accountability, Motivation, Education and Support.

I am working for abs this year and I know it will happen. But this is me a 41 year old cancer survivor... don't tell me you can't do it. I know better.

The Health Benefits of Bilberry



Good morning! Today I am teaching you guys all about the #Bilberry. Another superfood found in my  with @shakeology every day. Bilberries contain a potent type of flavonoid antioxidant called anthocyanosides. Super food Peppermint Patty Milkshake


Time for your Super food lesson!!! Because educating yourself is the first step to good health and nutrition. Today you are learning all about Schisandra!!! The health benefits of Spirulina




If you have not heard about the health benefits of Spirulina, it is time to do so! Let me tell you what this superfood can do! Below is a summary of what Spirulina can do. Get yours HERE

Immune Support
A number of animal and test tube studies suggest that spirulina increases production of antibodies, infection-fighting proteins, and other cells that improve immunity and help ward off infection and chronic illnesses such as cancer. However, it has not been tested in people. In one clinical trial that involved humans, another type of blue-green algae called chlorella did not boost the immune response to flu vaccine.

Protein Supplement
Amino acids make up 62% of spirulina. Because it is a rich source of protein and other nutrients, spirulina has been used as a nutritional supplement. However, although spirulina contains a certain level of protein, you would need to take very large quantities to see any effect. Other sources of protein, such as nuts, legumes, whole grains, and meat, provide protein in smaller servings.

Allergic Reactions
Animal and test tube studies suggest that spirulina may protect against allergic reactions by stopping the release of histamines, substances that contribute to allergy symptoms, such as a runny nose, watery eyes, hives, and soft-tissue swelling. But whether these preliminary studies will help people with allergies is not known.

Antibiotic-related Illnesses
Although antibiotics destroy unwanted organisms in the body, they may also kill "good" bacteria called probiotics, such as Lactobacillus acidophilus. This can cause diarrhea. In test tubes, spirulina has boosted the growth of L. acidophilus and other probiotics. More research is needed to determine whether spirulina will have the same effect in people.

Infection
Test tube studies suggest that spirulina has activity against herpes, influenza, and HIV. But researchers don’t know whether it would also work in people.

Oral Cancer
In one placebo-controlled study, taking spirulina seemed to reduce a precancerous lesion known as leukoplasia in people who chewed tobacco. Lesions were more likely to go away in the spirulina group than in the placebo group. More research in this area is needed.

Liver Disorders
Preliminary evidence suggests that spirulina may help protect against liver damage and cirrhosis (liver failure) in people with chronic hepatitis. Without more research, however, it is impossible to say whether spirulina offers any real benefit.

Green Superfood Strawberry Smoothie 

1 cup frozen organic strawberries, 
1 packet greenberry 
1cup almond milk. 

Blend and serve!!

Vanilla Chai Superfood Milkshake


It is fall! Time for all things Chai. That usually means a lot of temptation for me. Not anymore!!!
Now that I have replaced the stuff I used to put in my chai tea with Shakeology, I am staying fit and healthy and get a treat too! Why? This is super easy, healthy, and fast!


Clean Garden Breakfast

1 Avocado, sliced.
1 tomato, sliced
4 eggs
1 cup spinach, chopped
1/2 cup sweet onion chopped
2 slices gluten free bread - toasted
salt and pepper to taste
1 tsp olive oil cooking spray

Spray your pan with olive oil and heat the pan over medium heat. Whisk the eggs. Add your chopped onions to the pan and stir until fragrant. Pour in your eggs and spinach. Salt and pepper to taste. While eggs are cooking toast your bread.
Top your toasted bread with sliced avocado. Salt and pepper the avocado. Top with the eggs mixture and fresh cut tomatoes.
