Lately Kale has been all the rage in the nutritional world. That is because it is a nutritional powerhouse. One cup of chopped kale contains 33 calories and 9% of the daily value of calcium, 206% of vitamin A, 134% of vitamin C, and a whopping 684% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus.
Kale’s health benefits are primarily linked to the high concentration and excellent source of antioxidant vitamins A, C, and K -- and sulphur-containing phytonutrients.
So naturally I was very interested in trying Kale chips. They are really good! I now always have these around to snack on in between meals. If you are like my son and don't like anything green, then I can't help you. Naturally they don't taste like potato chips. But they taste really good. The addition of ranch flavor makes these much better than the ones I can get at my organic market. They are simple to make. Enjoy!
Ranch Kale Chips
1 head kale, washed and thoroughly dried
2 tablespoons olive oil
2 Tbsp. Parsley
2 Tsp. Garlic Powder
2 Tsp. Onion Powder
1 1/2 Tsp. Dill
1 Tsp. Salt
1/2 Tsp. Pepper
Preheat the oven to 275 degrees F.
Remove the ribs from the kale and discard.
Cut Kale leaves into bite size pieces.
Toss Kale with olive oil, parsley, garlic powder, onion powder, dill, salt, and pepper . I find it easiest to put in a large ziplock bag and add the ingredients, then shaking it.
Lay on a baking sheet bake until crisp,
Turn leaves halfway through, about 20-25 minutes. Serve Enjoy!
