Chocolate Quinoa Puff Bars


I am excited today! My son flies in to California from Oregon. I am excited to see him and give him a huge hug! It is going to be a busy weekend because A lot of family are flying in. My son is walking in his high school graduation. He finished school a while back, but now it is time for the ceremony. It will be a great time of celebration!

I have been doing so good on eating healthy, but because of this special occasion, it is time for a little splurge. Still wanting to keep it as healthy as possible, I went searching for a way to put some wholesome ingredients into my chocolate. I found Quinoa puffs. A healthy alternative to adding rice krispies for a crunchy chocolate bar. 

I loved this bar and so did my guests. One said it reminded them of chocolate covered popped corn. Works for me. An easy way to sneak in more protein! 

Chocolate Quinoa Puff Bars
8 ouces 60% or darker chocolate
1 cup puffed quinoa

Melt your chocolate, either over a double broiler, or in the microwave at 50% heat for 3 minutes. Stir until smooth. 

In a small baking dish (8x8 or similar size) prepared with parchment paper, Pour half the quinoa puffs in the bottom. 
Pour the melted chocolate on top. 
Top melted chocolate with the rest of the quinoa.
Place in the refrigerator for 2 hours before cutting into bars and serving.
