Welcome to a new week! I am on week three of my healthy eating quest. Because Monday's are always the hardest for me. I whipped up these bars to have something to snack on should my sweet tooth come into play.
Today I am bringing you the easiest larabar recipe there is. Cashew cookie. It is also one of the tastiest. With just 3 wholesome ingredients you get this natural healthy cookie bar. Seriously took me less than 3 minutes to make.
This is probably the healthiest cookie bar you will have. Makes for a fabulous snack for the kids!
Keep them in the fridge for up to 3 weeks in an airtight container, or the freezer for 6 months. So you can double or triple the recipe for a later time. Ours never last that long because they get eaten too fast.
Raw Vegan Cashew Cookie Larabars

1 cup pitted dates
1 1/2 cups raw unsalted cashews
1/2 tsp vanilla extract
Add all ingredients to your food processor and pulse until blended. Scrape into an 8x8 baking dish and freeze for 1 hour, then pull out and cut. Makes 6 Larabars.
