It is Meatless Monday and I have another fabulous Larabar recipe for you. If chocolate chip cookie dough is your thing, then this is the bar for you. I make a lot of larabars and everyone has their favorite. This one is mine. I love cookie dough, but I never eat it because I don't need the sugar and calories. For me, this tastes just like a great cookie dough and I cannot believe it is healthy! I told my husband I need to buy a crate of organic dates and cashews. I love that I can even eat this for breakfast and not feel guilty!
Chocolate Chip Cookie Dough Larabars
adapted from Oh She Glows
2 cups raw cashews
2 cups medjool dates
1 tsp pure vanilla extract
3 tbsp mini dark chocolate chips
Add your cashews to a food processor and pulse until they resemble bread crumbs. Next add your dates. Make sure the pits have been removed. Add Vanilla and pulse until fully blended.
Add mixture to an 8x8 pan, or similar size, prepared with parchment paper. Press down firmly. Top with mini chocolate chips and press them down.
Place in the freezer for 1 hour and then cut into bars. Store in an airtight container in the fridge or freezer.
