Today I have another treat using Terra Verde Farms Spicy O's.
I decided to make spicy hushpuppies, because I was making a large shrimp meal for my husband.
Hushpuppies is a savory, starch-based food made from cornmeal batter that is deep fried or baked in small ball or sphere shapes, It is considered soul food, and is most often served as a side with seafood.
These are light and fluffy with a little spicy kick. Enjoy!
Spicy O’s™ Hushpuppies
adapted from Terra Verde Farms
1 2/3 Cups Corn Meal Flour
1/3 Cup better batter gluten free Flour
1 Tbs Kosher Salt
2 Tsp Baking Powder
2 Tsp Baking Soda
½ Cup Milk
½ Cup Sour Cream - or - plain greek yogurt
¼ cup Spicy O’s™ Chopped
¼ Cup fresh or frozen Corn
Oil for frying
Mix dry ingredients together in medium bowl.
In separate bowl, lightly beat eggs, blend in milk and sour cream or greek yogurt.
Add Spicy O’s™ and corn to wet ingredients, stir wet and dry ingredients together until moist.
Let rest for 5 minutes. Heat oil in a deep fryer or a sauce pan until 360°, using a tablespoon drop batter into hot oil until golden brown, on one side (about 1 minute).
Turn with slotted spoon brown other side. Drain on a paper towel and serve!
