Healthy Superbowl recipes that curb the cravings but keep you on track!

So yeah. The big day is right around the corner. You know... the one where endless temptations are in front of you for hours while the TV breaks to commercial telling you WHY those things are so yummy. You have no other options... I mean veggies and hummus only go so far... so you cave. You justify that it is a special occasion and you throw your promise you made to yourself (to stay on track) out the window. I mean... there is always next Monday.
Right?
WRONG! 
That mindset is just gonna keep you right where you are, and you said you want CHANGE! 

I have got ya covered. The trick is to have yummy treats on hand that are HEALTHY!
So here is a round-up of things I keep on hand that keep me and my goals going strong!

Nothing is more expensive than a missed opportunity


What is opportunity worth to you?

As I am closing up the final days of the first month in 2017, I am overwhelmed with gratitude and excitement watching the new members of team nourish take off, get their first big paychecks, advancing in rank, getting featured on various fitness apparel and gears sites!!! NOTHING makes me happier than watching others thrive in this business using the tools I have taught them. 

Sometimes I think back to all the people I talked to who WANTED this opportunity, but let fear get the better of them, so they let it pass them by. I think about what their bank accounts and workout wardrobe would look like now. What friendships they have missed out on. I think of their missing faces at summit when we are all together celebrating. I think about them being stuck at that job they told me they wanted out of. A WHOLE YEAR just GONE and they are still stuck in the same situation. All because of fear or lack of knowledge.

What REALLY saddens me most are the ones that are doing the job already, for nothing, getting nothing in return and missing out on reaching and HELPING thousands more with their posts because they are afraid to believe in their power. 

So the text on this image rings SO true to me.... how missed opportunity is so expensive. I do this to help save others from the ugly path of cancer that I went down. I tried all gimmicks before and then cancer taught me there are no shortcuts. You have to eat right, show up and workout, and also work on your mindset to make a shift happen in your life. 

So to all I have spoken to in the past. To all who have watched my posts about joining #TeamNourishbut you just ignored that tug. NOW is the time to TAKE ACTION and kick fear to the curb and START. Trust that my team and I have you. We will walk or run with you. love you, encourage you, inspire you, challenge you, and work WITH you to get you to all your hopes and dreams. 

I am looking for people that want their job to have purpose. Your earnings are a direct reflection of how many people YOU HELP.

Clean Eating Fish Quinoa Rice Bowls

I am limiting my carbs and upping the protein and veggies because I am doing a MMA style workout program. I am working so hard and don't want to mess up my results with my food choices. Sometimes you NEED comfort food. I have found this to hit the spot. It is refreshing, but also filling and comforting. I don't miss the shell one bit. I do a blend of quinoa and brown rice for my one carb and it is yummy all while adding extra protein.

Clean Eating Fish Quinoa Rice Bowls
For the cilantro lime crema:

1/2 cup Greek yogurt
3 tablespoons chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon minced garlic
a pinch of salt

For the avocado cucumber salsa:
1 red onion, diced
1 avocado, halved, pitted, peeled, and diced
1 small cucumber, diced
3 tablespoons chopped fresh cilantro
the juice of 1 lime

For the fish:
1 lb snapper fish fillet or other white fish
2 tablespoons olive or avocado oil
1/4 cup coconut flour
1 teaspoon cumin
1 teaspoon chili powder
¼ teaspoon cayenne pepper (adjust to taste)
To assemble:
1 cup cooked brown rice
1 cup cooked quinoa
1 cup shredded cabbage
Optional:
fresh cilantro, finely chopped
lime wedges
Instructions
Cilantro lime crema:
Combine all the ingredients for the crema in a blender and blend until smooth. Pour the crema in a bowl, cover and refrigerate until ready to use.

Avocado cucumber salsa:
Place the cucumber, avocado, red onion and cilantro in a bowl. Drizzle with lime juice and season to taste. Mix it gently and set aside.

Fish:
Pat the fish fillets dry with paper towels. Combine the flour and spices in a shallow dish.
Dredge each piece of fish in the flour mixture.
Heat the oil in a large skillet over medium-high heat. Add the fish to the skillet and cook for about 3 minutes on each side. Remove the fish from the skillet and shred with a couple of forks.
To serve, divide the rice between 4 bowls then add the toppings: fish, shredded cabbage, and avocado cucumber salsa. Drizzle the cilantro lime crema, sprinkle the chopped cilantro and serve with lime wedges.
