Hidden Veggie Jerk Chicken & Rice




I have grown to love veggies, but it is still a struggle for my family. So I hide them as much as possible. It is so easy to do now days. This recipe DOES have Cauliflower, but when you mix it 50/50 with the Basmati Rice, spices and onion, you can't taste it. It makes you feel like you are getting MORE rice too, which is a trick this carb lover uses regularly.  So here is how I made this scrumptious Hidden Veggie Jerk Chicken and rice.

Let's start with the Jerk Seasoning followed with the marinade, because you will need those first and they come from someone I love dearly! Her name is TAS and I met her through this online coaching gig. We are running a Summer Shape Up online bootcamp together. I got permission from her to share her Jerk Seasoning and Marinade. Tas Scott-Gass “Jerk” EVERYTHING for dinner tonight!! ðŸ”¥ðŸ”¥ðŸ”¥ But I have to say, I REALLY loved it on my head of cauliflower! Instead of putting it straight on the grill, I put in on a pie plate wrapped in foil and let it bake on the upper rack while I grilled chicken and sweet potato below! Definitely one of my favorite flavor combinations!

💥 JERK SEASONING ðŸ’¥

4 t. Allspice
4 t. Salt
2 t. Ginger
2 t. Nutmeg
1 t. Cloves
2 t. Thyme
2 t. Pepper








💥 For MARINADE add:

4 scallions
8 cloves of garlic
2 T. EVOO
2 T. Honey
Juice of 1 lime
1 habanero (scotch bonnet) - or 1/2 or 1/4 depending on your heat level! (Sometimes I use 2 ðŸ”¥

❤️This is good for 2-3 lbs meat or veggies. I like to double up the spice blend just to have on hand for eggs or lunch veggies. It’s honestly good on everything! ðŸ”¥ðŸ”¥ðŸ”¥

SO now that you have your seasoning and marinade. Lets get down to business. 
Preheat your oven to 375.
In a mixing bowl, combine:

2 cups riced cauliflower
1/2 chopped onion
2 cups cooked basmati, jasmine or brown rice
1 tsp jerk seasoning

Add to a large prepared baking dish.


Next you need:

1 1/2 lbs Chicken breasts (or your favorite cut of chicken or protein) I cut mine to tenders. 
Jerk seasoning to taste
avocado or olive oil

Lightly sprinkle the jerk seasoning onto cut prepared chicken (or your favorite protein) on both sides. 
Heat a fry pan on high and lightly coat with your favorite HEALTHY cooking oil (Olive, Avocado, Coconut). Flash fry... quick sear each piece of meat on both sides for about 30 seconds, then top on top of prepared baking dish filled with rice and cauliflower. 

Top each piece of seared protein with the marinade you prepared. Then put in the oven for 20 minutes.

Honey Ginger Glaze Ono and Pineapple Salsa

I made this healthy fish dish last night and it was DIVINE! 100% clean and healthy, but tastes sinful. Super simple too! 


Honey Ginger Glaze Ono and Pineapple Salsa

Serves: 4-6


Ingredients
1½ lbs Fresh Ono cut into 4-6 pieces ( or any white fish )
⅓ C coconut aminos
⅓ C honey
3 TBSP ginger root
2 garlic cloves
1 TBSP olive oil
-------
Pineapple Ginger Salsa
½ pineapple, pealed, cored, small diced ( about 3 cups)
1 jalapeño- seeds removed, very finely diced
¼ C finely diced red onion
1 tsp finely minced or grated ginger root
½ Cup chopped cilantro
⅛ tsp kosher salt


Instructions
Make marinade for the fish. Super easy... put all in a blender:
soy sauce, honey, sliced ginger, garlic and olive oil and blend until smooth.
Place fish and marinade in a ziplock bag or bowl for 20 minutes or up to 24 hours.


While fish is marinating, make pineapple salsa.
Slice and dice half a pineapple into ½ inch cubes and place in a medium bowl. You should have about 3 cups.Toss in the rest of the ingredients. for a milder salsa, add only ½ a jalapeño.


Preheat oven to broil.
Prepare Fish. Heat oil in a large heavy bottom skillet, over medium high heat. When oil is hot, place the fish in the skillet, saving the marinade. Sear the fish, on its sides, and then place in the broiler for 8 minutes to cook through. If you like a rare fish, you can skip the broil. For medium rare, a quick 2-3 minute sear on each side is all you need.


Pour the remaining marinade into the skillet and bring to a boil for 30 seconds, until it thickens. Spoon this over the fish, along with a generous amount of pineapple salsa before serving. I served on top of spinach and romaine for a nice salad, but it is great on rice or quinoa too.

15 minute best red curry ever. Did I mention it's clean?


I have got a bowl full of yum!

The time has come again for me to do my 3 day cleanse. When I first did the cleanse it was much harder for me. Now it is so easy. I actually feel too full to finish my daily food portions. I love it because you get to eat real food.  If you are interested in trying out a 3 day no exercise cleanse, email me and I will send you over all the info. It is Vegan, Organic, Non-gmo, whole food cleanse.


This is the quickest easiest meal you can make... IF you have a trader joes nearby. When I am in a time bind I buy their asian stir fry veggie blend and whip this up. This is my go to meal when I am cleansing. It contains the veggies needed and your healthy fat. Totally cleanse approved. When we are not cleansing we just add our favorite chicken, fish or shrimp. You can add zoodles for a vegan thai ramen. We love it and I would eat it on or off the cleanse any day of the week!


15 minute Clean Red Curry  


1 tablespoon avocado oil
2 cloves garlic, minced
1 Tbsp ginger minced
1 jar red curry paste (4Tbsp estimate)
4 cups broth
1 15-ounce can coconut milk
1 tablespoon fish sauce
1 package asian stir fry veggies mix from trader joes
-or-
Mixed raw veggies of choice (example: bell pepper, onion, mushroom, water chestnuts, bamboo shoots etc.)


Put on the stove a large pot (that has a lid for later use) with the oil on medium-high heat. Add the garlic, ginger, and veggies and cook them them until they are fragrant .. just a few minutes.

Add the curry paste. Stir everything together.

After a few minutes, add the broth, coconut milk, and fish sauce. Cover with the lid and bring everything to a boil.

Let the soup simmer, uncovered, for 5 minutes. 
Serve!

OPTIONAL: Serve with Lime Wedge, Jalapeno slices and 1 tsp freshly chopped Cilantro.

When ENOUGH is ENOUGH its time to take ACTION and change your life permanently

Hey beautiful.
Yep, I am talking to you. 
Right now I want you to STOP the negative self talk and realize how amazing you are. 
So you have dark circles under your eyes, from taking care of EVERYONE else but you. 
SO WHAT your tummy is stretched out from the LIFE you brought into this world. Maybe you haven't had time or money to make it to the hair or nail salon so a messy bun is a constant companion on your head. YOU ARE BEAUTIFUL! 

I realize first hand how much of our identity is given up when we decide to have children. I also know Mom's would not change a thing. We give our ALL to those we love. But... I am here to remind you.
YOU GOTTA FIRST LOVE YOURSELF!!!

It is a humbling experience to become a mom and no one quite prepares you for that. I know what it is like to have a tummy that feels like jello and NO energy to do anything about it. Which led me to just eating comfort food to console my self loathing thoughts.

This is the place I was in 3 years ago. I was fat, sick and nearly dead..

Well maybe not, but I sure felt like it. I was 6 weeks POST operation for the removal of 3 cancer tumors in my body. My tummy had been sliced open 8 inches for the biggest tumor to be removed which REALLY did a number on my self esteem. I looked 6 months pregnant because of the HUGE tumor that was growing in my uterus.  Frustrated, defeated and full of tears I remember laying in bed thinking "THIS IS NOT THE WAY LIFE IS SUPPOSED TO BE!" 

I hated my skin, hated my hair, hated everything about me. I was angry at the world and I KNEW that I didn't want to feel that way any more. NEVER again! I made the decision to give myself the love I needed and wanted. So I could learn to love others and help others stop hating themselves. I never looked back. I didn’t feel good and I had to make a change. I was introduced to yoga, clean eating, and superfoods through my Cancer recover counseling and ended up getting more education in nutrition. I also documented the process and what I learned in my book: Nourish - The beginner's guide to eating healthy and staying fit. 

I fell in love with inversions. Headstand, handstand, pincha, but I could not hold them for long and my alignment was not awesome. I knew I needed more muscle and toning. I had lost 10 lbs just from adding superfoods and yoga into my life and I finally had more energy to add more. So I started adding a 30 minute workout to my life. What happened next...

Over the course of those next 3 months I focused on “ME” for at least 30-45 each day. I would push play for my workout session. I sweated, I cried, I thought I would never change, but then right before my eyes my body started to change. As I embraced clean eating and drank Shakeology daily my skin began to glow, my hair and nails got stronger, and I had more natural energy! I was stronger and I started to have more confidence. WHAT!!!! I was THAT girl who NEVER had EVER Stuck to a fitness program in my life. I always started our the year making a New Years Resolution to get in shape and then I was gone in 2 weeks and stuck paying a membership for the year. I was the girl who would walk into a gym, take some classes and then walk around doing the weights (COMPLETELY WRONG) acting like I knew what I was doing, then I would go make a huge italian dinner with bread and noodles and loads of wine. I had never permanently changed my diet before, but, I liked it! I mean I REALLY liked who I was transforming into, and I LOVED the way my LIFE was changing. 

This is my transformation of 2 rounds 21 day fix and 1 round 21 day fix extreme and Shakeology. Total time 3 months.

Total weight lost from start to finish -65lbs. 
I started running little groups of other women and men that wanted to change their lives too. 
That is when the miracles started rolling in!
My best friend Penny has lost OVER 100 pounds so far!

My daughter lost 35 pounds!

And that was just the beginning! As of now I personally have been able to help HUNDREDS of people reach their goals. I also started a team that is joining forces with me and we all work together to help people as much as we can. 

My inversions sure changed too!!!

I can say that because of my team, the support of the challenge groups and the other women in the group I truly have found a way to love the skin that I am in! 


We all have imperfections.  I earned my imperfections and I learned to love them! They are a part of who I am. Does this speak right to your heart??? Then maybe its time for you to trust me and finally take that leap of faith and join my next challenge group!

So now, my job as a coach is to pay it forward. I am going to be launching a specific accountability and support group that is geared towards matching you up and with a fitness program and nutrition guide to meet your needs but to walk you through the process of changing your unhealthy habits, creating a more positive mindset, embracing your imperfections and chucking the word diet to the wind. We are not dieting, we are creating a healthy lifestyle. Because we are supposed to be ABUNDANT in ALL areas of our lives. 

So STOP making excuses and make a DECISION to change instead. I promise you will work just as hard on your excuses that you will on effort towards your goals. So why not work toward the POSITIVE?

What Do I Need For This Group?
-Each participant is required to have me as their coach. You can create an account here. 

-You are required to do a fitness program, which I will help you to pick the one that best fits your needs. EMAIL ME to tell me you want in we will go over your needs, your current struggles and then decide the program for you.

-You are required to replace 1 meal a day with Shakeology for the duration of the 5 weeks because as I am teaching you how to change your eating habits and give you the tools to make this a lifestyle change we want to have at least 1 meal each day that is quick and easy but isn’t lacking in your nutritional quality. Shakeology does that! It is my saving grace because quite honestly there are days that I am so busy that I don’t have time to make a balanced meal so this is my go to!! It has EVERYTHING your body needs, and is superfoods! Plus it really does taste awesome!

–You are required to log into our closed My Challenge Tracker App daily where I am going to share tips, recipes, meal plans, tips to handle eating out, and emotional eating plus improving your body image. We will truly take your journey one day at a time! I have been through the process and I know at what point you want to throw in the towel, I know when you hit plateaus and what situations tend to trip you up. I have tools and tips for all of those. There is no more trying to navigate this change on your own. We are working at this together.

–My goal is to get you a program that you are excited about and that you start and complete it. I do not want it to be something that sits on your shelf and collects dust!

Healthy Superbowl recipes that curb the cravings but keep you on track!

So yeah. The big day is right around the corner. You know... the one where endless temptations are in front of you for hours while the TV breaks to commercial telling you WHY those things are so yummy. You have no other options... I mean veggies and hummus only go so far... so you cave. You justify that it is a special occasion and you throw your promise you made to yourself (to stay on track) out the window. I mean... there is always next Monday.
Right?
WRONG! 
That mindset is just gonna keep you right where you are, and you said you want CHANGE! 

I have got ya covered. The trick is to have yummy treats on hand that are HEALTHY!

Healthy Protein Coconut Cranberry muffins

I am doing super great on my goals. My daughter gets married in a little over 2 weeks and I want to make sure I look and feel good for the event. But man I do love carbs. Carbs don't love me. I eat healthy carbs like fruit and beans, but grain and I have to break up anytime I am trying to tone up. 

I got some gorgeous cranberries in my CSA Organic box, so I decided to use them in a healthy muffin I could reach for when a carb craving comes along. 

Cranberries are misunderstood. People overlook them and reach for traditional berries, when the truth is, they are just as good! I love the tangy tartness it brings to these muffins that are low carb high protein and gluten-free. Enjoy my healthy friends. Nothing better than muffins! 


Healthy Gluten-Free Protein Coconut Cranberry muffins
Makes 12 Muffins

4 tablespoons coconut oil, melted
6 eggs
4 tablespoons whole coconut milk, canned
60 drops liquid stevia drops or sweet drops (vanilla creme is the best) You can insert maple syrup, orange juice, applesauce or any other sweetener alternative here.
1/2 teaspoon pink himalyan sea salt
1/2 cup sifted coconut flour
1/2 teaspoon baking powder

2 cups cranberries, rinsed and chopped.
1/4 cup coconut sugar, or stevia drops, or maple syrup, or orange juice

In large bowl, mix eggs, butter, coconut milk, stevia and salt. 
In smaller bowl, combine sifted coconut flour and baking powder. 
Add dry mix into batter, blending thoroughly until there are no lumps. 
Pour batter into greased muffin tins.
Mix cranberries and sweetener of choice together in a sauce pan and stir over low heat until bubbly. place a TBSP of the cranberry in the middle of each muffin batter in filling dividing into 12 muffins and bake at 400 degrees F for about 15 minutes. Enjoy!

New Sinful Snack that is actually quite healthy



My oh my... I think I hit the mother load. Blogging is a fun thing, especially when you get to try new HEALTHY treats that taste like a decadent truffle. I was given a pack of these new ProBurst Bites from enjoy life foods to try. They simply asked I share my opinion in return.

I'm in!

Especially since it was Enjoy Life Foods that was asking. They have a solid reputation in my book. Non-Gmo is SO important to me, and they are non-gmo! I am picky. So I did my research. These bad boys are packed with up to 7 grams of plant-based protein per serving!!! These heavenly chocolate, truffle-like bites are perfect for an allergy-friendly decadent snack. Enjoy life foods has earned mad respect from me because they are always FREE from all major food allergens:

Egg
Casein
Potato 
Soy
Dairy
Gluten
Peanut
Sesame
Wheat
Tree Nut
Shellfish
Sulfites

I REALLY enjoyed these and I WILL be purchasing more from my local market. While I liked them all, my favorite 2 were the sunbutter, and the cinnamon spice. Both were to die for. 

My family enjoyed these for our friday family game night. Instead of crappy food, we got some nutrition in us while feeling like we were cheating. So it was a win. EVERYONE loved them. Thumbs up!!!


Moist Baked Mustard Salmon with Asparagus

Hey hey hey! I am back at it! What a difference a new kitchen makes!
We are slowly getting settled in our new home and I am IN LOVE! It is the most favorite home I have ever had. Just the right size for me. My favorite feature is my kitchen/desk space. I have room to create again. It feels amazing. Then afterwards, I can walk into my yoga room to stretch out and get grounded.  Life is pretty amazing right now.

With the holidays, the year end push my team and I do for elite (we made it yay!), the move, and welcoming a new son-in-law... I got behind on my clean eating. So I did what any coach would do and I cleansed that shit out. I do a 3 day cleanse to get my body back in a good alkaline state and then I maintain that with clean eating and Superfoods with an extra boost of Powergreens to boost the oxygen in my blood. Cancer can't live in blood that is in that state, so that is how I stay cancer free. If you have any questions about this, I have tried everything and have easy affordable solutions for you. So now it is back to clean eating. My husband found some amazing wild caught Salmon. I wanted a moist buttery finish while filling my body with those luscious omega 3's. So I chose to do a low bake. 

The Salmon and mustard sauce go SO well with Asparagus, so I combined the recipe. The more greens the better! 

The Moistest Baked Mustard Salmon with Asparagus

1 bunch thin asparagus (about 1 pound), trimmed 
2 tablespoons olive oil, divided 
3/4 teaspoon kosher salt, divided 
1/2 teaspoon freshly ground black pepper, divided 
4 (6-ounce) skin-on salmon fillets 
8 teaspoons country-style or whole-grain Dijon mustard 

Preheat oven to 275°F. 
Line your broiler pan with parchment paper. 
Toss asparagus with 1 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on the bottom layer of the broiler pan. Bake asparagus 5 minutes. 
Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total. 
Prepare the top layer of your broiler pan with parchment paper. 
After asparagus has baked for 5 minutes, remove broiler pan from oven. Place prepared salmon fillets skin side down on top sheet of broiler pan. Put top sheet on bottom sheet of broilder pan and return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14–16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates. I served with basmati/quinoa 50/50 blend for added protein instead of just straight carbs.
