Pollo arrosto in tegame …Pan Roasted Chicken with garlic rosemary and white wine

I am changing up the way I post my blogs, so it will be easier to navigate. Each recipe will have it’s own posting. For instance. Today I am making chicken with parmesan risotto and parmesan asparagus. So you will see 3 postings for today. Only one will have my blah blah blah verbage on it or tip of the day though.

So I had wanted a crock pot for those busy work days where I just throw everything in. Well yesterday I did just that for my Boeuf Bourguignon. Then with my horrible headache and my short temper I got ticked off at it after 3 hours it was not getting hot enough. The HIGH temp on it was not high enough. So I put it in the oven for the last hour at 400 degrees. Well.. don't do that. I melted the handle. hahahahaha! I don't know why I assumed since it was a great sturdy Crockpot with enamel finish and everything I figured it would be fine. Nope. Good news is the crock pot lives on, I just have to have a knife to open it cuz my handy handle is now melted off. I can be so dumb sometimes.

Heads up everyone. Big sales at grocery stores today, here in Cali anyway. Only til 9pm. At Vons (that is Safeway for you Oregon folk) Their chicken on the bone is only $0.88 a pound. At Albertsons a 4lb bag of naval oranges is only $0.99! We have a naval orange tree in our back yard, so we don't need the oranges. But for those of you that don't that is a great deal! A lot of my recipes have citrus in them. Mini wheats are 2 for $3 and if you use the $1 off coupon that was in the paper, or just go to http://www.grocerygame.com/ and print off the coupon, then you get them for just $1 a box. Pretty nifty!

I still have my horrible headache. I have tried everything, from coffee to wine, to advil to vicodin. Now I have to take my last imitrex. I say it is my last because I have to go back in to the doctor to get it refilled and anyone who knows me, knows I DREAD the doctor. This imitrex is the last one left in my migraine prescription and then I have to go back in. HUMBUG! i have been saving this last precious imitrex, but alas, I now must take it.

Any way...Going along with my theme of easy meals this week: This is one of the simplest and tastiest ways to make chicken. From start to finish you should have this on your table in less than 45 minutes. March 3 - March 9th you can get Chicken thighs  for $0.88 a pound. So you can make this meal for: $2.64 in protien.

Pollo arrosto in tegame …Pan Roasted Chicken with garlic rosemary and white wine

2 TB Butter
2 TB Canola Oil
4 Cloves garlic Peeled
3 pounds Chicken on the bone
1 branch rosemary (or ½ tsp dried if you must)
Salt
8 twists of the pepper mill
½ cup white wine.

Heat the butter and oil in deep skillet or sauté pan over medium-high heat. When the butter foam subsides add the garlic and the chicken skin side down. Cook until that side is brown, turn over and add the rosemary to the pan. Brown the chicken on all sides and then add a pinch of salt, the pepper and the wine.
Here it is one side browned:


Let the wine boil for 2-3 minutes, then reduce heat to simmer and cover the pan. Let simmer for 25 minutes. Or until done. Scrape up the juices from the pan and serve over chicken.

I put the chicken on top of some yummy parmesan risotto and served parmesan asparagus on the side. You will find those recipes under this blog post or by clicking "side dishes" or "veggies" on the right side of my blog. I am trying to get this all organized so when you want to find a recipe it won't be hard to find.
