Here is how I sous:
Riz frit au poulet or...
Chicken Fried Rice
5 tsp canola oil
2 eggs, beaten
2 tbsp chopped onion
2 tbsp chopped green onion
2 tbsp chopped carrots
1 tbsp minced garlic
4 cups steamed white rice
1 chicken breast chopped into small pieces.
3/4 tsp salt (optional)
1/4 tsp black pepper
2 tbsp butter
4 tbsp soy sauce
Salt and pepper TT
Make sure you cook/steam the white rice ahead of time. I am partial to basmati rice. Cut chicken breast into tiny pieces. Heat a nonstick skillet
Move to the side of the skillet. Add 1 tsp of oil and scramble the eggs until firm.
Chop eggs. Move to the side of the pan . Meanwhile, add the remaining 2 tbsp oil to the pan, and raise the heat to medium-high. Sauté the onion, green onion, and carrots until tender - about 2-3 minutes.
Mix in the rice, chicken, and chopped eggs. Salt, and pepper stirring well. Add the butter and soy sauce to the mixture, stirring until well combined.
I love mybig electric skillet
