Riz frit au poulet... Chicken fried rice

I love this dish. I could eat it as my main meal for days. I never get the chance though. This is one of those few meals that everyone in the house loves. Anytime my kids see that ugly fresh ginger root come home from the grocery they get all excited. Ginger may be ugly but man does it taste good! It is another one where I would recomment SOUSing all the ingredients. If you have it all sous'd then it is super easy and quick.
Here is how I sous:


Riz frit au poulet or...
Chicken Fried Rice

5 tsp canola oil
2 eggs, beaten
2 tbsp chopped onion
2 tbsp chopped green onion
2 tbsp chopped carrots
1 tbsp minced garlic
4 cups steamed white rice
1 chicken breast chopped into small pieces.
3/4 tsp salt (optional)
1/4 tsp black pepper
2 tbsp butter
4 tbsp soy sauce
Salt and pepper TT

Make sure you cook/steam the white rice ahead of time. I am partial to basmati rice. Cut chicken breast into tiny pieces. Heat a nonstick skillet over medium heat. Add 1 TB Garlic, Add 2 tsp of oil and the chopped chicken, sprinkle with salt and pepper.

Move to the side of the skillet. Add 1 tsp of oil and scramble the eggs until firm.
Chop eggs. Move to the side of the pan . Meanwhile, add the remaining 2 tbsp oil to the pan, and raise the heat to medium-high. Sauté the onion, green onion, and carrots until tender - about 2-3 minutes.

 Mix in the rice, chicken, and chopped eggs. Salt, and pepper stirring well. Add the butter and soy sauce to the mixture, stirring until well combined.




I love mybig electric skillet. I use it all the time. Especially for big dishes like this where I feel my biggest skillet just isn't big enough.
