Portland Coffee Cake

I have been feeling down with being sick and Taylor wanted some cooking time with me. We decided to make something that reminded us of home. Portland Coffee cake from Starbucks. Now this is my version of the recipe, but I gotta tell you, tastes the same! Just like it! Even Jordan came back for 3rds.


Topping-

1 c flour

1 c light brown sugar packed

1/2 c butter softened

1tsp cinnamon

-cake-

1 cup butter softened

3/4 c light brown sugar packed

1/2 c sugar

2 eggs

1 1/2 tsp vanilla

2 cups all purpose flour

1 tsp baking powder

1/4 tsp salt

1/3 c milk

preheat oven 325°

Make topping by combining flour w/brown sugar, stick of butter and cinnamon in medium bowl. Mixture should have consistency of moist sand.

In large bowl, cream butter, brown sugar, sugar w/mixer til smooth and fluffy. Add eggs, vanilla and mix well.

In a Separate bowl combine flour, baking powder, salt. Add dry mixture to moist ingredients, a little at a time. Add milk and mix well. Spoon batter into 9 x 13 pan, buttered and dusted with light coating of flour.



Sprinkle crumb topping over batter, be sure topping completely covers batter. Bake cake for 50 mins or until edges begin to turn light brown.




Cool and slice. Serves 8

  2. I am SO excited to try this recipe!!! I still live in Oregon, but in a small town about 250 miles from Portland and you CAN'T find this in any Starbucks except in the city itself. Thank you so much for this!! Reminds me of home!

  4. Good morning! I got up early today and just baked this before work (it smelled terrific!), and haven't even tried it yet - but I have a question! You mention a 9x13 pan, but your photo of the cake in the pan looks like it's in a square pan...? Did you actually mean a 9x9, or some other square dimension, by chance? The finished product in the 9x13 wasn't the typical depth of the Starbucks version, but I also live at a 3500' altitude, so that could be the reason, too. Thank you!!!

  5. You can bake it in a square one for a little bit longer and it will be thicker. Nope, my picture is of my 9x13 pan, but it probably just is from a different angle. It is my basic blue pan I always use. I hope you enjoy the cake!
