Sometimes there is not a plan. I like to have everything planned out, but if there is one thing I try to plan for... it is that the plan will fall through and I need a backup plan. This is coming from a hardcore type A go go go go go person. I sometimes have to laugh at myself. It is ok. I have come to like my personality and highly motivated and driven mind. I fully admit I go to much sometimes and my body gives out and I have to rest to get better. Luckily I have not had to many of those days lately.
I have however, had many plans fall through. Especially when it comes to cooking. I really am trying to figure out everyone's schedules in this house. Just when I thought I had it all figured out, it changed again. The thing I struggle with the most is having food available for my daughter before her work. I know everyone else can grab anything. Taylor on the other hand is not as lucky with her Celiac.
Today as I heard my daughter scrambling around getting ready for work, I rummaged through my fridge looking for what I would feed her. I came up with some freshly bought corned beef, havarti cheese and udi's gluten free bread. Perfect.
Gluten Free Monte Cristo
1 egg
1/2 tsp vanilla
2 TBSP milk
2 slices gluten free sandwich bread
slices of Corned Beef
2 slices havarti cheese (you can use swiss if you prefer)
Preheat your grill or skillet to medium heat (350)
In a small bowl whisk together your egg, vanilla and milk.
Dip one side of each slice of bread into the egg mixture and place on the grill.
Top each slice with meat and cheese slice. Grill until golden brown and put together.
Slice and serve. I served mine with little shots of tomato soup.
Gluten free?? I will have to send this to my gf who has to eat that way. She will love it!
