Here is the scenario. Tired, hungry, dirty, daughter and a broken water heater. The two don't mix. 
Last night Taylor went to take a shower before she left for work. The water was freezing. Husband went to check out the heater and the pilot light was out. He re-lit it, but not in time for her to have her shower and be on time to work. She got home this morning, (she works graveyard) and when she woke up, went to take a shower... Repeat the scenario above. I guess it went out again. Husband is at work. Enter meltdown. Tired, hungry, dirty, daughter is not happy. Now while this is not my problem. I am a Mom and I react to those around me. Especially those I love. What to do? Gluten Free German pancakes. She has been asking me to create this for a while. I guess there is no time like the present. The trick is, she wanted a "healthy version". Now my disclaimer is that you can only have so much "health" when it comes to eggs, flour and such. But this is a lot healthier than basic recipes out there. If you are not looking for a "thin version" of German pancakes, just use regular butter and sugar instead of earth balance and agave. 
Sugar Free Gluten Free German Pancakes

Yield 2 9-inch pancakes.
4 eggs
1 tablespoon agave nectar
1/2 teaspoon salt
2 tablespoons earth balance butter spread
Sift together Gluten Free flour and salt and set aside. 
Heat oven to 400°F. Butter two 9-inch pans well. Put eggs in blender and blend until light yellow in color. Add remaining ingredients, agave nectar, gluten free flour, milk and earth balance spread, blend until processed smooth. Pour into prepared pans and bake 20 minutes; then reduce heat to 350°F and bake 10 minutes. Slide onto hot plates. 

Serve with lemon butter (recipe below) and sliced fresh strawberries sprinkled with a packet of Stevia.
 
Lemon Butter:
 
2 TBSP earth balance spread
Juice of 1/2 a lemon
1 packet stevia
Mix together and serve.
