The definition of comfort food for me is pasta and cheese. That can be an issue in a gluten free house, right? Wrong! There are so many great gluten free pasta's available out there. There is no need to feel like you will never get your comfort food again. I got a box of Jovial Penne Rigate Gluten-Free pasta and could not wait to make it! I chose to make;
Gluten-Free Penne with Chicken and Vodka Sauce
Gluten-Free Penne with Chicken and Vodka Sauce
1 Pound Chicken Breasts, Cut into bite sized pieces
3 Ripe Roma Tomatoes Chopped
1 Tablespoon Extra Virgin Olive Oil
1 Teaspoon Garlic, chopped
1 Tablespoon Parsley Flakes
1 Tablespoon Crushed Bay Leaves
1 Teaspoon Crushed Red Pepper
1/4 Cup Vodka
1 Cup Heavy Cream
1/2 cup Mozzarella cheese
1/2 cup Mozzarella cheese
1/2 Cup Parmesan Cheese
Sauté the garlic in the extra virgin olive oil.
Add the chopped tomatoes, Chicken, parsley, bay leaves, red pepper and vodka.
Simmer for about 10 minutes in medium heat.
Cook the penne until al dente (8 minutes) and drain.
And the heavy cream to the sauce and cook for 2 minutes in low heat.

Add the Penne to the sauce.
To the top add the Mozzarella and Parmesan cheese.
Bake at 350 degrees for 10 minutes just enough to melt the cheese and serve.
