My husband loves Cauliflower... raw, cooked, baked... he just loves it. Another one of his loves: SPICE! They Spicier the better. So when I saw a post for spicy cauliflower, I had to bookmark it and adapt it to a gluten free version. not at all hard to do with kinnikinnick gluten free Panko style bread crumbs. If you like spicy, this will be right up your alley.

1 cup kinnikinnick gluten free Panko style bread crumbs
3 tablespoons cornstarch
3 eggs
1 head cauliflower
1/2 tsp Salt
1/4 tsp pepper
1 tablespoon garlic powder
1/4 cup chopped Green onion
1/4 cup canola oil

Sauce
1/3 cup Mayonnaise
1/4 cup Siracha
1 tablespoon rice vinegar
1 tablespoon sugar -or- agave

Break up your cauliflower florets.
Put your cauliflower in a ziplock bag. Add cornstarch, close bag and shake to cover cauliflower with cornstarch evenly.
In a separate bowl, Whisk eggs together. Pour cauliflower into the bowl and toss until covered in egg.
Sprinkle gf panko crumbs and seasoning mixture over the cauliflower and toss to coat.

After coating all of your florets, warm up your canola oil in a large frying pan and place all florets in hot oil. Turn with tongs making sure all sides are browned.
Set on top of paper towels to remove excess oil. Top with more salt.

In a small bowl mix all of your sauce ingredients. Coat your breaded and pan fried florets with sauce, top with sprinkles of green onion and serve right away.
