Chopped Salad

The trick to a tremendous chopped salad is making all the ingredients as close to the same size as you can. You can make it southwestern by adding black beans and corn, or a waldorf by adding apples and nuts. The possibilities are endless! I love doing salads like this because I can cater to each family members tastes. For instance; my husband loves celery in his salad. I can't stand it. I like celery for just eating or dipping, but mixed in my salad it makes me cringe.
I love to put a chopped salad in a jar as well, for easy picnics. Here are several options for your salad:

Lettuce
Hard Boiled Egg
Cucumber
Tomato
Red pepper
Carrot
Celery
Sweet Onion
Avocado
Green Onions
the list goes on and on... but you get the idea. Top with your favorite dressing and you are all set.
