Sugar Free Tropical Ice Cream

I make a lot of ice cream during the hot summer months. It is my favorite thing to do with leftover fruit or frozen fruit.
If you don't have an ice cream maker, I really suggest you get one. I use mine several times a week.

Now this recipe says "sugar free" it is free of processed sugar and only contains natural sugar that is in the fruit. I love using Coconut Nectar to sweeten the ice cream because it adds sweetness and tropical flavor.

Lite Tropical Ice Cream
1 1/2 cups frozen mango
1 fresh banana
1/4 cup coconut nectar
1/2 cup water
1 cup heavy whipping cream

Optional: Fresh Mint for garnish

Place the mango, banana, coconut nectar, and water into a blender. Blend until smooth. Pour into your ice cream maker and add the heavy whipping cream.
Turn on the machine and run until it is the consistency you like. Usually 20-30 minutes. Scoop and serve!

  3. This looks like a perfect ice cream for me because it is low sugar. I have to jump back on the "ice creaming" horse. I had such bad luck with my ice cream maker the first few times I used it last... I have been hesitant to use it this summer. Total user error on my part, I'm sure. Have a great weekend! :)
