Gluten Free Cucumber Salsa
adapted from Bon Appetit
2 cups peeled diced cucumber
1/2 cup finely sweet onion
1/4 cup chopped fresh cilantro
1/4 cup fresh mint
1 finely diced jalapeno with seeds
The Juice from one lime
1 TBSP Canola Oil
Salt and Pepper to taste
Add all ingredients to a large bowl and stir flavors together. Chill until ready to serve.

ReplyDeleteYes, I make mine the day before all the time and keep it in an airtight container in the fridge until you are ready to serve.
