Mexican Flatbread Pizza

I like to post quick easy meals on here every once in a while. I realize a lot of people don't enjoy cooking, but they do enjoy eating. So I have been trying to even out my long hard gourmet recipes with some throw it together easily recipes. 3 easy ingredients gets you this quick easy meal. All you need:

Slices of Fontina Cheese
Pico De Gallo Style salsa

I have posted on here about Venice bakery before. Their gluten free pizzas and gluten free flatbreads are outstanding. They are highly recommended by Taylor. 

All you need to do is place a slice of gluten free flatbread on a baking sheet. I used the sheet that came with our toaster oven. Top generously with your favorite Pico De Gallo.
 I have yet to find a Pico De Gallo that has gluten in it, but I still like to make my own. You can find the recipe here.
Next top with slices of fontina cheese. Bake at 450 degrees for 8 to 10 minutes and you have a quick simple tasty meal.

  2. I'm all for quick and easy!! As much as I cook I still have some convenience food so I can make things on the night I'm dog tired of looking at my kitchen. Now this... this is fresh and yummy!!
