This week I had the blessing of being sent some Coconut flour from Bobs Red Mill. I was excited to work with it because I had been doing reading lately about Coconut Flour and how it is very high in fiber, low in digestible carbohydrates, a good source of protein and gluten free.
While I was given a free sample of the flour. I was not paid for my view on this product and anything I write here about it is 100% my opinion.
I love this flour. With it's sweet flavor, not as much sugar is needed in sweets. I thought it would make things taste like coconut. I have made several things with this flour now and I would not even know there was coconut flour in it. My experience with this flour is it makes things sweet and light. Now for THE BEST pound cake recipe ever, using Bob's Red Mill Coconut Flour. Tastes like normal full of gluten pound cake. Yum. I made Valentines heart pound cake. This is the perfect thing to make your sweetie on Valentines day!
AND it was so good I also made pound cupcakes.
Gluten Free Pound Cake
1 cup Coconut flour
1 cup gluten free all purpose flour (I used Maninis Multiuso)
1 tsp xanthan gum (only if your gf flour doesn't already contain it)
1 tsp sea salt
1 tsp baking powder
3/4 cup canola oil
1 cup sugar
3 tbsp orange juice
2 tsp vanilla extract
3 eggs
2/3 cup milk
Preheat oven to 350 degrees.
Sift together flours, sea salt, and baking powder small bowl and set aside.
Pour canola oil into a large mixing bowl or the bowl of a kitchenaid mixer, and slowly mix in sugar, orange juice, and vanilla extract.

Add eggs one at a time, mixing after each addition.
Add milk and mix until fully incorporated. Gradually add dry ingredients into wet ingredients, mixing well.
Pour batter into prepared pans.
Bake for 30 minutes for bigger heart shaped pans.
Bake for 20 minutes for small cupcakes.
I topped mine with homemade whipped cream.
This pound cake is so good Cece was drooling for some!
If I had strawberries on hand I would top it with strawberries, but whipped cream was perfect.
It was good plain too.
