Creamy Red Onion and Cucumber Salad

Taylor is growing up. It has been so much fun the last few months, watching my teenager begin to turn into a mature young woman. Let's back up... This daughter of mine is one of the messiest people I have ever met. For real. I am not over-exaggerating at all. Find anyone who has met her argue with me... I'll bet you that you won't find a single person. I always say that God has a sense of humor, because I am anal and controlling when it comes to my home being kept clean, yet I ended up with two of the messiest kids ever. I brought the kids up on strict rules of keeping their rooms clean, until middle school, when I felt there were bigger fish to fry. Plus at that point in their life we lived in an over-sized home, and it felt like it was a hike just going up to their rooms to try to enforce them cleaning up and it ended up being a full time job that just wasn't worth the fighting. It was then that I realized I was stuck with two very very messy kids. And those messy kids were stuck with a mom constantly nagging them to fix the mess. Now I am not saying my daughter, who just turned 19, magically woke up one morning and turned into a neat freak. She is still messy, but it is starting to matter to her. She has started planning out her weeks and scheduling cleaning and laundry. I have been able to see her floor for 2 weeks now, and that is a new thing, because she NEVER would clean without me having to threaten taking away her car or some other punishment. She is also concerned about staying fit, working out hard for an hour each day. Self motivation, that is what she has started showing in the last few weeks. I am happy to see that. As a parent I want the best for my kids that are now turning into adults. So I find joy in seeing small accomplishments... like having a clean room, taking care of themselves, keeping a good job etc... without having to be told to. So that's my little happy moment of the week. My little girl is almost all grown up!


I mentioned Taylor is really persistent about staying fit lately. I have been working on staying fit too. So I am making lite and healthy options for us to eat. It is no secret that I am in love with Cucumbers. They are my absolute favorite thing to eat. I make a lot of different Cucumber salads. This one is a very light low calorie creamy onion cucumber salad. It helps my craving for a creamy treat, while helping me fight for a waistline. 


Gluten Free Creamy Red Onion and Cucumber Salad

2 cucumbers, very thinly sliced
1 red onion, very thinly sliced
2 tablespoons lemon juice
2 tablespoons greek yogurt
salt and pepper, to taste
1/4 teaspoon stevia -or- 1/2 teaspoon sugar
1 teaspoon chopped fresh dill


Mix cucumbers and onions together.
In another bowl, mix rest of ingredients together with a whisk.
Add to cucumber and onion mixture, and stir, chill for at least one hour before you serve.

  3. This is like my standard everyday salad. I love to eat this salad with rice and curry! It's a great way to cool off all the spice. :)
