Cucumber Dill Tomato Wraps

I am always looking for healthy appetizers to have ready for the crew while I am cooking dinner. It never fails, the minute I start cooking dinner... they all wander in, opening the fridge over and over and getting hungry from the smells created in the kitchen. So my solution is to have fruits and veggies available. I know... they get boring. So I like to get new ways to make them look appetizing. It works. The crew doesn't get filled up on garbage. This dish just tempted their taste buds and got them ready for the main event. 


Gluten Free Cucumber Dill Tomato Wraps

1 English Cucumber
2 Roma Tomatoes
Fresh Dill
Cream Cheese


Using a mandolin or very sharp knife. Slice your cucumber very thin lengthwise. 


Cut the core out of the tomatoes, and make long thin slices. 


In each Cucumber add 1 tsp cream cheese, a sprig of fresh dill and a slice of tomato. 


Roll up and keep in place with a toothpick.
