Cucumber Salsa

I can never get enough cool crisp side dishes. Give me some mason jars and fresh produce and I will fill them with as many salads, salsa's and dips as possible. Since Cucumbers are my absolute favorite, this dish hit the spot. Where we live in Southern California, one of the most popular dishes are fish taco's. This salsa goes SO nice with fish taco's. It is also good on it's own. 
Gluten Free Cucumber Salsa
adapted from Bon Appetit
2 cups peeled diced cucumber
1/2 cup finely sweet onion
1/4 cup chopped fresh cilantro
1/4 cup fresh mint
1 finely diced jalapeno with seeds
The Juice from one lime
1 TBSP Canola Oil
Salt and Pepper to taste
Add all ingredients to a large bowl and stir flavors together. Chill until ready to serve.

  3. How well does it keep? Could I make it the day before a party and it still be fresh tasting?

  4. Yes, I make mine the day before all the time and keep it in an airtight container in the fridge until you are ready to serve.
