I love days we go to the Farmers Market! Mainly because I can get fresh caught fish to make for dinner. Fish is always healthier and quicker. I am just picky about frozen fish. I like mine fresh! One of my husbands favorite things to order when we are out at a nice place is Blackened Salmon. So when we were presented with fresh caught Salmon today, I couldn't resist! I knew exactly what I would make. My husbands favorite dish. I was shocked at how easy this dish was. I served mine with Garlic Fried Rice, (recipe will be posted tomorrow) and it was so great! This meal is perfect for nights you need to get dinner on in less than 30 minutes. It was really one of the tastiest things I have ever put in my mouth. Plus; it is naturally gluten-free. Enjoy!
Blackened Salmon
adapted from This Mama Cooks
2 teaspoons Garlic Salt
1 teaspoon Paprika
1 teaspoon Onion Powder
1 teaspoon Oregano
1 teaspoon Black Pepper
1/2 teaspoon Cayenne Pepper
1/2 teaspoon Thyme
2 pounds Salmon

2 teaspoons Garlic Salt
1 teaspoon Paprika
1 teaspoon Onion Powder
1 teaspoon Oregano
1 teaspoon Black Pepper
1/2 teaspoon Cayenne Pepper
1/2 teaspoon Thyme
2 pounds Salmon
Combine garlic salt, paprika, onion powder, oregano, black pepper, cayenne pepper and thyme.
Mix it together and rub mixture on both sides of fish.
Note: I leave the skin on one side to fry. Once it is seared, I peel the skin off and add the seasoning. Frying the fish with the fat allows you to cook with virtually no oil. I just don't serve mine with the skin on.
Heat a large cast iron skillet over medium high heat. Spray skillet with non-stick cooking spray and add fish.
Cook 5 to 8 minutes on each side, or until fish flakes easily with a fork.
