I am happy to say I actually have a few halloween decorations out at my house this year. I never get motivated to decorate, but I do like to cook all things halloween. Thankfully I don't have much of a sweet tooth, otherwise I would turn into a hot air balloon very quickly. Just to make sure I don't, I am officially back on an exercise regimen. Mostly due to my daughter. She can be a slave driver! Misery loves company and she talked me into doing pilates with her. I actually don't mind it too much, but the day after I am so sore. We are just doing it Monday-Friday.
On that note, I am bringing you another sweet treat for this Autumn/Fall season. Great to serve at Halloween and Thanksgiving parties.
Gluten-Free Pumpkin Spice Rice Krispy Treats
adapted from http://www.shugarysweets.com
1/4 cup unsalted butter
10 oz bag marshmallows
1/4 cup pumpkin puree
1 tsp pumpkin pie spice
5 cups gluten-free rice krispies cereal
1 cup white chocolate, melted
*optional food coloring
In large pot, melt butter over medium heat.
Add in marshmallows and stir constantly until melted, once almost melted, add in your pumpkin puree and pumpkin pie spice.
Stir constantly until fully melted.
Fold in cereal.
Pour mixture into buttered foil pan. Or you can just pour it onto parchment. I put it on parchment because It is easier to cut. Press treats into a rectangular form.
I used my knife to cut into squares.
Optional: Drizzle melted white chocolate colored with orange and white over top of treats Allow to set about 1 hour.
Now I have some exciting news! You can now pre-order my cookbook via kickstarter!

Just curious, where do you find gluten free marshmallows?ReplyDelete
I've never found a marhsmallow with gluten. Ever. You can get just Kraft, or any other brand.ReplyDelete
Oh, I've seen marsmallows with modified food starch. But I have to admit, with no kids in the house, I don't buy a lot of marshmallows, so its been awhile since I tried to buy some. This definitely inspires me to go out and get some!!ReplyDelete
