Chicken Alfredo Lasagne

The other night I was having a craving for fettuccine Alfredo. The craving came late at night and so I refrained from hopping up and cooking it like I normally would. That left me with a lot of time to crave it. Then my mind wandered on to other things I could do with this dish I love so much. Then I thought... well why not a Lasagne? The idea sent me into an even deeper craving, so I wrote it down, just so I wouldn't forget.
Words cannot describe how good this dish was. I made a double batch in a HUGE pan, thinking it would re-heat nicely and we could have it for extra meals over the weekend. WRONG! We all had seconds. Even the picky boy and his girlfriend came down for more. This is not a dish to make when you are on a diet folks! When you are up for comfort food at its best... this dish is the answer!
Gluten-Free Chicken Chicken Lasagne
2 TBSP Olive Oil
2 large whole boneless chicken breasts cut in half
2 tsp Italian seasoning
salt and pepper to taste
1 box gluten-free Lasagne noodles (I use De Boles)
2 cups mozzarella

For the Alfredo Sauce:
1/2 cup butter
1 TBSP Gluten Free Flour
1 tsp garlic powder
1 tsp salt
1 tsp pepper
2 cups heavy whipping cream
2 cups shredded parmesan


Preheat your oven to 375 degrees. 

Prepare a lasagne pan by lining it with parchment paper.
Bring a large pot of water to a boil and cook your pasta according to the instructions. Drain and set aside.
Wash your chicken breasts and blot dry. Add Salt, Pepper, and italian seasoning to both sides.

Heat a skillet over medium high heat. Add oil, and then your seasoned chicken. 
You just want to lightly brown the chicken on both sides to sear it, not cook it through. 
Place your chicken in an oven safe dish and add to your preheated oven. Cook for 20 minutes. 
For the sauce: Start by heating your garlic, butter, salt and pepper in a large saucepan.
Next add your flour and whisk until smooth. Cook until bubbly and then add your whipping cream. 
Stir constantly until it comes to a boil.
Then add your Parmesan and stir continually until thick and creamy. 
Now cut up your chicken into bite sized pieces.
Next place a small amount of the sauce into prepared lasagne pan. 
Now place a layer of noodles on top of the sauce. 
Next add a layer of sauce.
Then a layer of your cut up Chicken.
Top with Mozzarella.
Repeat all layers again. 
Then place in your heated oven for 30 minutes. 
Let sit for 5 minutes, and then cut up and serve.

  4. Hi! I'm getting ready to make this recipe, but in the "how to" steps, you say to add garlic. I don't see it in the ingredients list - how much garlic please? :)

  8. Someone asked how much is in a cube of butter. It is 1/2 cup butter. I will change the recipe since was told it can be different in other countries.

  10. First, Thank you so much for this recipe! It was so incredibly delicious! Just so you know how good myself and my husband thought it was, let me tell you what happened. I made it last week with no bake noodles and completely ruined it. But even with the chewy noodles and overcooked cheese, my extremely picky husband enjoyed it. He asked for it again this week. This time, I boiled my own noodles and it came out perfect. It has been declared the new favorite dish at my house! It is rare that I can get him to eat anything new and actually like it, so I'm excited that he actually LOVED it! Thank you so much!

  11. So here I am reading comments as it's baking in the oven...with the OVEN READY LASAGNE NOODLES!!! Oops. Well...we will have to see how it comes out! I have to say...wow, was this easy...the chicken is amazing, and the sauce incredible...

  13. I am wondering if the 1/2 cup butter is an error? I made this and while it was delicious, as it cooled the butter started pooling and 2nd day was very greasy.
