St Patrick's Day Peppermint Patties

 
With St. Patrick's day right around the corner, and the fact that this is mint season. I figured it was time to make some peppermint patties, with green mint filling to be festive on the holiday. 
These are a great treat to bring to a party!


St. Patrick's Day Peppermint Patties
adapted from blue eyed bakers
Makes 16 patties

2 1/2 cups confectioners sugar
1 1/2 tablespoons light corn syrup
2 tablespoons water
1 teaspoon peppermint extract
1 tablespoon vegetable shortening
1 ounce green food coloring
8 ounces 70% bittersweet chocolate, chopped



In the bowl of an electric mixer fitted with the whisk attachment, beat all ingredients except the chocolate

Melt your chocolate in the microwave for 3 minutes at 50% power. Take out and stir until it is smooth and creamy. 

Pour a thin layer of the melted chocolate in the bottom of a muffin tin. If you don't have a silicone muffin tin, then you need to line the tin with baking cups to prevent sticking. 
Place the muffin tin in the freezer for 15 minutes to harden the chocolate. 
Pull out and top with a layer of the mint mixture. 
Place back in the freezer for 15 minutes. 
Top with another thin layer of chocolate.
Place back in the freezer for about 1 hour to let set. 
Pop out of muffin tin. 
Store in fridge, between wax paper in an airtight container.
