Gluten Free Mediterranean Pizza



Sometimes I love a simple healthy meal. 
I also am trying to sneak more vegetables into my daughters diet. The one guarantee I have is pizza. If I put ingredients onto a pizza crust or flatbread, it is pretty much guaranteed that Taylor will eat it. Venice Bakery has helped a lot with this. Their gluten free pizza crusts are so easy to work with and have filled my need for quick meal ideas. 
This pizza was a snap to make, and is filled with veggies. 
Mediterranean Pizza

2 tablespoons salted butter
2 cloves garlic, finely minced
2 cups grated mozzarella cheese
1 cup black olives
1 red pepper sliced
1/2 cup artichoke hearts
1 large tomato, diced
2 green onions, sliced
Preheat oven to 475 degrees. Place a baking stone inside to heat up with the oven. You can use a cookie sheet, but baking stones are better.
Melt butter in microwave for 10 seconds to soften and stir in minced garlic. Spread garlic butter over pizza crust. 
Sprinkle with cheese. Top with red peppers, olives, artichoke hearts, Tomatoes and green onions. 
Transfer the pizza, place onto hot pizza stone. 
Bake 15 minutes or until crust is golden and cheese is bubbly. 
Cut and serve.

  1. This pizza looks delicious (except for the olives, just cant seem to like them), I love Mediterranean flavors :) I need to try gluten-free pizza doe soon. Great post!

  2. Yum.. the garlic butter on the crust is fabulous!! I know your frustration.. you have a teen you need to get to eat veggies... I have two young ones I have to do the same thing with on a daily basis. This pizza looks great.
