Last week I asked readers on my facebook page "What is your favorite Christmas treat?" I got 21 replies that all made my mouth water. One reader said: "I love shortbread though and haven't had one since going Gluten free..." Well that got my attention. I think shortbread is very easy to make gluten-free. So today I am sharing my recipe.
1 cup potato starch
1 cup rice flour
1 tsp guar gum
1/2 teaspoon salt
2 sticks unsalted butter, room temperature
1/2 cup powdered sugar
1 teaspoon vanilla extract
In one bowl, sift together the 2 flours, guar gum, and salt.
In a mixer fitted with the paddle attachment, add your butter and sugar and beat until light in color and fluffy.
Scrape down sides of bowl and add in vanilla extract. Mix again until combined.
Next add your flour mix and carefully mix until just combined.
Turn dough out onto a sheet of plastic wrap, separate into workable sized mounds and wrap tightly- pressing into disks about 1-2" thick. Refrigerate an hour.
Line your baking sheets with parchment.
Preheat oven to 325*F.
Roll out your disks, one at a time, on a lightly floured surface, until you've reached about 1/4" thick.
Cut out however you desire- cookie cutters, free hand.
Place onto sheet pan spaced out about an inch.
Bake for 15-20 minutes.
Let cool completely on a wire rack and enjoy!
