Hidden Veggie Jerk Chicken & Rice




I have grown to love veggies, but it is still a struggle for my family. So I hide them as much as possible. It is so easy to do now days. This recipe DOES have Cauliflower, but when you mix it 50/50 with the Basmati Rice, spices and onion, you can't taste it. It makes you feel like you are getting MORE rice too, which is a trick this carb lover uses regularly.  So here is how I made this scrumptious Hidden Veggie Jerk Chicken and rice.

Let's start with the Jerk Seasoning followed with the marinade, because you will need those first and they come from someone I love dearly! Her name is TAS and I met her through this online coaching gig. We are running a Summer Shape Up online bootcamp together. I got permission from her to share her Jerk Seasoning and Marinade. They are the heart of this dish so THANK YOU TAS!!!

Now on to the delicious recipe!

Tas Scott-Gass “Jerk” EVERYTHING for dinner tonight!! ðŸ”¥ðŸ”¥ðŸ”¥ But I have to say, I REALLY loved it on my head of cauliflower! Instead of putting it straight on the grill, I put in on a pie plate wrapped in foil and let it bake on the upper rack while I grilled chicken and sweet potato below! Definitely one of my favorite flavor combinations!

💥 JERK SEASONING ðŸ’¥

4 t. Allspice
4 t. Salt
2 t. Ginger
2 t. Nutmeg
1 t. Cloves
2 t. Thyme
2 t. Pepper








💥 For MARINADE add:

4 scallions
8 cloves of garlic
2 T. EVOO
2 T. Honey
Juice of 1 lime
1 habanero (scotch bonnet) - or 1/2 or 1/4 depending on your heat level! (Sometimes I use 2 ðŸ”¥

❤️This is good for 2-3 lbs meat or veggies. I like to double up the spice blend just to have on hand for eggs or lunch veggies. It’s honestly good on everything! ðŸ”¥ðŸ”¥ðŸ”¥

SO now that you have your seasoning and marinade. Lets get down to business. 
Preheat your oven to 375.
In a mixing bowl, combine:

2 cups riced cauliflower
1/2 chopped onion
2 cups cooked basmati, jasmine or brown rice
1 tsp jerk seasoning

Add to a large prepared baking dish.


Next you need:

1 1/2 lbs Chicken breasts (or your favorite cut of chicken or protein) I cut mine to tenders. 
Jerk seasoning to taste
avocado or olive oil

Lightly sprinkle the jerk seasoning onto cut prepared chicken (or your favorite protein) on both sides. 
Heat a fry pan on high and lightly coat with your favorite HEALTHY cooking oil (Olive, Avocado, Coconut). Flash fry... quick sear each piece of meat on both sides for about 30 seconds, then top on top of prepared baking dish filled with rice and cauliflower. 

Top each piece of seared protein with the marinade you prepared. Then put in the oven for 20 minutes.

Strawberry Lemonade Muffins


HELLO SUMMER!!!

The reason why its so great to do a program now, is because produce is in it's PRIME, making it easier than ever to eat amazing delicious food all while staying on track. Strawberries are one of the things that make my life easier, cuz duh... they are amazing! 


I previously made some Lemon Poppyseed muffins that my family has been going nuts over. Of course they are gluten free and grain free too. But the daughter wanted strawberry lemonade muffins next, so I got to work. 

These are everything you want in a muffin, without the guilt. If you are on my nutrition program one counts as: 
1/2 Purple
1/2 Orange
1 Spoon






Strawberry Lemonade Muffins (gluten free and healthy)

2 eggs
1/2 cup pure maple syrup
1/3 cup fresh lemon juice
1 cup fresh strawberries pureed
1/4 cup fresh strawberries pureed(yes you will need this separate)
1/4 cup extra virgin organic coconut oil
1 tsp vanilla extract
2 tsp ground flaxseed
3/4 cup coconut flour
1/2 cup almond flour
2 TBSP chia seeds
1 TBSP baking powder
3/4 tsp salt

Preheat the oven to 350 degrees.

Mix ALL the ingredients together. I used a kitchenaid. 
Prep a muffin pan with 12 cupcake liners.

Pour mixture into prepared pan.
make a finger indent in each muffin and pour a little fresh strawberry puree in the center, just enough to fill your indent.


Cook for 30 minutes.

Serve immediately or store in an airtight container in the fridge.

Moist Baked Mustard Salmon with Asparagus

Hey hey hey! I am back at it! What a difference a new kitchen makes!
We are slowly getting settled in our new home and I am IN LOVE! It is the most favorite home I have ever had. Just the right size for me. My favorite feature is my kitchen/desk space. I have room to create again. It feels amazing. Then afterwards, I can walk into my yoga room to stretch out and get grounded.  Life is pretty amazing right now.

With the holidays, the year end push my team and I do for elite (we made it yay!), the move, and welcoming a new son-in-law... I got behind on my clean eating. So I did what any coach would do and I cleansed that shit out. I do a 3 day cleanse to get my body back in a good alkaline state and then I maintain that with clean eating and Superfoods with an extra boost of Powergreens to boost the oxygen in my blood. Cancer can't live in blood that is in that state, so that is how I stay cancer free. If you have any questions about this, I have tried everything and have easy affordable solutions for you. So now it is back to clean eating. My husband found some amazing wild caught Salmon. I wanted a moist buttery finish while filling my body with those luscious omega 3's. So I chose to do a low bake. 

The Salmon and mustard sauce go SO well with Asparagus, so I combined the recipe. The more greens the better! 

The Moistest Baked Mustard Salmon with Asparagus

1 bunch thin asparagus (about 1 pound), trimmed 
2 tablespoons olive oil, divided 
3/4 teaspoon kosher salt, divided 
1/2 teaspoon freshly ground black pepper, divided 
4 (6-ounce) skin-on salmon fillets 
8 teaspoons country-style or whole-grain Dijon mustard 

Preheat oven to 275°F. 
Line your broiler pan with parchment paper. 
Toss asparagus with 1 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on the bottom layer of the broiler pan. Bake asparagus 5 minutes. 
Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total. 
Prepare the top layer of your broiler pan with parchment paper. 
After asparagus has baked for 5 minutes, remove broiler pan from oven. Place prepared salmon fillets skin side down on top sheet of broiler pan. Put top sheet on bottom sheet of broilder pan and return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14–16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates. I served with basmati/quinoa 50/50 blend for added protein instead of just straight carbs.

Before and After transformation


My #SundayShoutout goes to this amazing soul @pennywade who is also co-leading in our FIt For Summer group that starts tomorrow.

EVERYONE has a different starting point. We all have our story, and our choices, and our excuses. The thing that sets us apart, is that we are ready to work on ourselves.

I remember hitting that point, but not knowing where to start. I remember going to the gym and attending classes and trying to figure out what my body needed. It didn't work, because I didn't know what I was doing.

Since then I have been blessed to receive and education that has allowed me to LEARN about nutrition, yoga, fitness, wellness, mindset etc... It is my passion to HELP those at their beginning to get on this journey and realize they are worth it! EVERYONE deserves to be happy and healthy. Let's get your before and after!

Healthy Clean Vegan Avocado Peanut Butter Cup Pudding



Healthy Clean Vegan Avocado Peanut Butter Cup Pudding


2 ripe avocados
1 large ripe banana
1/2 cup unsweetened cacao powder
1/2 cup creamy peanut butter
1/2 cup pure maple syrup, OR date paste
1/4 cup almond milk 

Coconut Whipped Cream for topping (recipe below)



Add all ingredients except coconut whip into a food processor and blend until creamy and smooth. 
I layered mine with the Coconut Whipped Cream to make a yummy parfait!
Leftovers will keep in the fridge up to a few days!


Coconut Whipped Cream
1 CAN whole pure coconut milk placed in fridge over night.
8 drops sweat leaf vanilla cream drops

Take out solids from can (use the runny milk for smoothie or other wholesome treat). Add drops and whip. 
BOOM vegan, dairy free, sugar free, awesome whipped cream.

Live the life of your dreams on your terms

If the only thing you look forward to in life is the weekend, then it is time for a change.

18 months ago I took a chance.

I was ready to commit to a healthier life.

Little did I know this chance would lead to me finding some of the best friendships I could hope for, with amazing souls that love and accept me for who I am, freedom to live my ‪#‎LifeByDesign‬ and hop on a plane, train, or automobile to check things off my ‪#‎BucketList‬ and to go love on my team mates that live on the opposite side of the U.S. from me. This past YEAR I have seen New Hampshire, Boston, Maine, Connecticut, New York, New Jersey, Philadelphia, Las Vegas.... and in the next 4 months I am going back to Vegas, Jersey, Maine and then going to KENYA Africa!!!!!
This "job" does not require travel. It allows you to live your life by YOUR design because it can be done anywhere in the U.S. and Canada. So while I was having the time of my life I was still collecting my paychecks. So that leads me to:
What do you want to do with this precious gift of life?
Why waste it in a cubicle or a dead end job?
Maybe you want to be at home more with your babies?
Maybe you want to see the world?
Maybe you want more time with your love?
Maybe you want to have more time at home?
Maybe you want to buy a home?
This ‪#‎opportunity‬ is open to anyone that is willing to help others and lead by example.

Ginger Red Curry Sea Bass


I served this dish last night and we all loved it. 
Gluten-Free
Soy-Free
Clean Eating - Guilt free
Enjoy!

1 (13.5 ounce) can unsweetened coconut milk
Juice of one lime
2 tablespoons Thai red curry paste
1 teaspoon agave nectar or maple syrup
2 tablespoons minced peeled fresh ginger
2 garlic cloves, minced
1 teaspoon fish sauce
2 tablespoons chopped fresh cilantro plus more for serving
2 tablespoons minced scallions plus more for serving
4 6-ounce Sea Bass
Cooked Brown rice for serving


Combine first 7 ingredients (coconut milk through fish sauce) . Sir together then place your fish in a baking pan and coat both sides of the fist with about half of the sauce. 

Place the rest of your sauce in a medium saucepan. Bring mixture to a boil and simmer until sauce thickens slightly, 8 to 9 minutes. 

Remove from heat; stir in cilantro and green onions. 

Preheat oven to 400 degrees. 10-20 minutes, depending on thickness of fish. Serve fish with hot rice and remaining sauce. Sprinkle with additional cilantro and scallions, if desired.

Why not you?

Mine is everywhere. 
Many of you don't know my past. You see, I have 3 college degrees. Every time I would finish one, I would find something else I wanted to learn. I have worked in early child development, Accounting, was a software engineer for 5 years, and ran my own multi million dollar business for 10 years prior to my Cancer battle... I still say this is what caused my cancer because I had to work 80 hour work weeks to keep that thing rollin'.

All of it prepared me for today. But none of it filled my soul with joy. I know I am here to help others and those other professions, just didn't fill my cup. 

Coaching entered my life during my recovery from cancer. I was led to superfoods and healing my body through nutrition and movement and it changed everything for me. 

This is NOT about weightloss.

Yes it is a side effect of eating right and moving my body. But I help many gain weight too. This is about total and complete happiness and contentment with your life. 

 I get to connect with people all over the U.S. and Canada and help encourage them on their journey and they encourage me right back. 

I can work from anywhere with a wifi connection. I have worked on sailboats, cruise ships, airplanes, trains, cars,  hotel rooms, my garden, the park, the library, the beach... you name it. 

I wake up excited to check in with my tribe and see who I can help encourage and often times, they turn around and encourage me. 

My body is stronger than it has ever been.
I look forward to Monday morning. 
I LOVE my job and would do it even if I wasn't paid to do so. 
I am encouraged to spend time developing myself, filling my tank. 
I am surrounded by like minded individuals that uplift me rather than those who bring me down.
Every day I am encouraged to continue working towards being the best version of me. 

SO my question for you is this. 
If you don't like Monday mornings and commuting, what are you going to do to fix it?

Summer Slim down - Lose weight and get fit for summer




Yes that is me in the first picture, and me in the second picture. I have helped a lot of people reach their health and fitness goals, but I don't share their vulnerable pictures with the public unless they are ready for it.. SO here I am sharing mine. 

On the left is what I looked like at the beginning of my coaching journey. I was all clear for physical activity and knew that if I committed to documenting my journey, it would hold me accountable. It was life or death for me. It is just as hard for me as anyone else to exercise and eat right. It was a HUGE struggle for me to overcome and I feel like it is my duty to help others. I realize not everyone is ready to share their journey publicly. That is why I run small intimate groups, for those that are ready to get healthy, but maybe not publicly.

I am looking for those of you in the first picture.

Minions Easter Eggs
Take your egg-decorating game to the next level with these adorably devious minions from @hannah_rex. They’re simpler to make than they look – all you need are blue and yellow dye, a sharpie, and a steady hand. Dunk the whole egg in yellow dye until it’s completely colored, let it dry, and then hold the bottom half of the egg in blue dye for one to two minutes. Googly eyes available at your local craft store make these cheerful characters come to life, but they can also be drawn on. For those who prefer something a bit more conniving, a purple minion will get kids giggling.

Easter Egg Lunch Box
This idea from A Kailo Chic Life makes lunchtime fun with veggies, crackers, fruit, and bite-sized sandwiches packed in colorful plastic eggs served in an egg carton. They’re like a fun version of Portion Fix containers, but for kids!

Cheese and Crackers Chicks
Bring a little springtime spirit to snack time with this super simple take on cheese and crackers. All you need to make these chicks are round whole-wheat crackers, cheese, baby carrots, and a handful of spinach leaves. Find out how to make them here.

Carrot Patches
Taste and Tell turned the simple snack of carrots and hummus into an Easter party centerpiece. She made individual carrot servings by dipping carrots topped with parsley leaves into tiny flowerpots filled with hummus.

Yogurt Easter Egg Popsicles
If your part of the country is hit with a springtime heatwave, you’ll need something refreshing to feed your kids when they finish running around outside searching for hidden Easter eggs. These popsicles from Eats Amazing are a healthy, frozen treat made with yogurt, sweet berries, and crunchy granola mixed together and frozen in egg-shaped molds.

Sweet Potato Bunnies
All you need to make this Easter-inspired snack from With Style and Grace are sweet potatoes and a bunny-shaped cookie cutter. If you don’t have a cookie cutter, try your hand at shaping slices of sweet potato with a sharp paring knife. Spray them with nonstick cooking spray and bake them until soft for a healthy and adorable Easter side dish.

Tomato Tulips
We know that April showers bring May flowers, but when Easter falls in March, Mother Nature might need help in the floral department. Brighten up any spread with these tulips made from cherry tomatoes, chives, and cheese. Use Neufchatel or ricotta cheese to keep this treat both healthy and beautiful. Bunny Pancakes
Kick off Easter morning with with a darling bunny pancake breakfast like this one from Nico and Lala. Whip up a batch of Multi-Grain Banana Pancakes in sizes to make the bunny body, head, ears and feet. Decorate the paws with banana slices and mini chocolate chips, and fashion a fluffy tail from shredded coconut.

Veggie Flowers and Egg Birds
This snack idea from Artsy Craftsy Mom presents a cheerful Spring scene. Dress up peeled, hard-boiled eggs as chickens using carrot slices for feathers and beaks, and sesame seeds for eyes. Place them on a bed of lettuce in a garden of flowers made from decorative cucumber and carrot flowers.

Easter Bunny Eggs
These Easter bunny eggs from My Fudo will hop off their centerpiece and into the mouths of happy kids. Use radishes for the ears, celery for the whiskers, and sliced black olives for the eyes.
