Green Beans and Caramelized Pancetta Recipe

Leave it to me to turn a healthy dish, into something sinful. I could not help it. Sorry. I will do anything to get vegetables into my kids. This one did it. The blend of sweet and savory is perfection. I would enjoy this as a main dish, but I am odd so here is a new side dish for you all to enjoy!

Gluten Free Green Beans and Caramelized Pancetta Recipe

1 pound green beans
2 ounces pancetta, diced
2 TBSP brown sugar
1/4 cup red onion, chopped
1 TBSP minced garlic
2 teaspoons butter
1/4 cup white wine
Freshly ground black pepper and sea salt to taste

 Heat a large sauté pan on medium high heat. Add the diced pancetta, sprinkle with brown sugar and cook, stirring occasionally, until caramelized, 2-3 minutes. Use a slotted spoon to remove the pancetta from the pan to a plate.
Add the white wine to delgaze the pan. Add the red onions and garlic to the pan. Cook, stirring often, on medium high heat, in the fat rendered from the pancetta, until lightly browned.
Add butter to the pan; add the drained green beans and pancetta. Season to taste with salt and pepper. Stir constantly until the beans are hot and are well mixed with the garlic, onion and pancetta. Serve immediately.
