Crock Pot BBQ Pulled Pork Sandwiches gluten free

Recently we were blessed to have friends and family visit for two weeks in our neck of the woods in Southern California. It was so nice to spend time with our loved ones. All good things come to an end and i am a glass is half full person so it feels great to be back to a daily routine, until the next visit at least =).
I made a lot of easy dishes during the visit. This was one of them. Initially I found the recipe to be too salty, so I adjusted the salt and also strain out the marinade at the end before adding the barbeque sauce. The result was the BBQ pulled pork sandwiches that my kids dream of. So nice that Kinninnick came out with new Gluten Free Hamburger Buns. My daughter was so thrilled to be able to eat one of her favorite sandwiches again.
Gluten Free Slow Cooker Smoky BBQ Pulled Pork Sandwiches
Recipe adapted from Six Sisters' Stuff
3-4 pound pork shoulder roast
3 Tablespoons paprika
1 Tablespoon salt
1 Tablespoon pepper
1 tsp garlic powder
1 tsp dry mustard
1/3 cup liquid smoke
1 (16-20 oz) bottle of your favorite BBQ sauce

Spray the inside of slow cooker with non-stick cooking spray.
Combine paprika, salt, pepper, garlic powder, mustard and liquid smoke in a small bowl.
Rub all over the roast, covering all sides. 
Place lid on slow cooker and bake on low for 8-10 hours (or high 5-6 hours). Shred meat when finished and strain meat. Add bottle of your favorite gluten free BBQ sauce.
Serve on  Kinninnick Gluten Free Buns  and enjoy!
