I absolutely love Mexican food! I always have. So I am so thankful I can make so much of it and it is naturally gluten free. Nothing says comfort to me more than a bowl of Spanish Rice. I have made it a lot of different ways, each unique in their own way. This one is really tasty, and really really easy to make. Perfect side dish for when you only have 30 minutes to get dinner on the table.
Gluten Free Spanish Rice

1 14-15oz can `fire roasted tomatoes with green chiles
1 1/2 cups chicken stock
1 1/4 cups long grain rice
1 tablespoon melted butter
1 teaspoon chili powder
1 teaspoon oregano
2 cloves garlic minced
1 teaspoon cumin
Add all ingredients except rice into a food processor and pulse a few times to mash up tomatoes.
Add rice to a rice cooker.
When it is done garnish with green onions and cheddar cheese and serve.
I love spanish rice. Haven't had it in a while but maybe I should have it today ... yum!

ReplyDeleteI didn't realize you could make flavored rice in a rice cooker! Now that I think about it, it doesn't really surprise me, it just never once occurred to me!
