I am finding more and more that I have people sitting around waiting for dinner to be ready. It makes me uncomfortable when there are hungry mouths to feed and it is an hour from dinner time. 10 ounces fresh mozzarella, chopped into cubes
2 roma tomatoes, seeded and juiced
3 tablespoons freshly chopped basil
3 tablespoons cream cheese
Preheat oven to 375.
Use the skin and flesh only of the tomatoes.
Make sure tomatoes have as much juiced squeezed out of them as possible, because the juice of the tomatoes will make the dip soupy if you don't remove the juice.
